Have you ever heard of Caprese salad? It’s incredible! It’s a salad made of sliced mozzarella cheese, tomatoes, basil, and olive oil. I love this combination so much that I made a chicken dinner with these ingredients.
Just like all my recipes, this is one you could make on super-busy weekdays. It only takes about 25 minutes from start to finish, and tastes like you worked on it for hours.

Trust me, use the freshest ingredients you can find. If you have an herb garden, pick some fresh basil. Use soft mozzarella. The fresher the ingredients, the best this chicken dinner will taste.
The mozzarella, tomato, and basil combination are perfect for lots of other recipes too. I just fell in love with it on the chicken, but it would taste delicious by itself as a salad.
Easy Caprese Chicken
This chicken recipe is perfect for your meal prep. When you make it for dinner, reserve some of the chicken for your meal prep containers. It will stay fresh in the refrigerator for up to 5 days.
Enjoy this chicken on a lettuce wrap, over a salad, or on top of your favorite cauliflower rice. I can see this tasting delicious with my cilantro lime cauliflower rice too.

How To Make Caprese Chicken
All of the details for how to make Caprese chicken are in the recipe card at the bottom of this post. Basically, I seasoned the chicken breast first and then grilled it to perfection.
You could also marinate it in balsamic vinegar and Italian seasoning. If you marinate the chicken first, it will be even juicier.
Low-Carb Balsamic Glaze
What really sets this chicken apart from others is the balsamic glaze. After you grill the chicken, make a low-carb balsamic glaze by reducing balsamic vinegar in a saucepan with some brown sugar substitute.
The balsamic glaze really is just balsamic vinegar that you simmer with brown sugar. To make it keto-friendly, use a brown sugar substitute, like Lankato.
You’ll add the cheese, tomato, and fresh basil all at the end, right before you serve it! It really is that easy!
Grilled Caprese Chicken
I think that grilling the chicken is the best way to make this dish. You can use an indoor grill or a grill plate or your stove. If you don’t have a grill plate a grill (or just aren’t in the mood to use it) you can make this on the stove too.
Just add some olive oil to a frying pan. Then, cook the chicken for about 8 minutes on each side. Use an Instant-Read food thermometer to check the internal temperature of the chicken. Chicken is fully cooked when it reaches 165 degrees F.

Ingredients:
- Chicken Breasts
- Balsamic Vinegar
- Italian Seasoning
- Tomato
- Fresh Mozzarella Cheese
- Basil
- Swerve, or any brown sugar substitute
Instructions:
1. Season the chicken breast with 2 tablespoons balsamic vinegar, Italian seasoning, salt, and black pepper. Cover and allow to rest on the counter as the grill heats, no longer than 1 hour.
2. Prepare the grill according to the manufacturer’s directions to burn at medium-high heat.
3. Place the chicken on the grill and cook, uncovered, for 5 to 8 minutes on each side depending on the thickness. Test the chicken for an internal temperature of 165 degrees.
4. Remove the chicken and top each chicken breast with a slice of mozzarella. Tent the platter with aluminum foil and allow the cheese to melt.
5. Meanwhile, place the remaining balsamic vinegar into a small saucepan with the brown sugar sweetener. Bring the mixture to a boil over medium-high heat and immediately reduce the temperature to medium-low, allowing the vinegar to reduce by half. The vinegar will thicken as it cools. If the mixture becomes too thick to spoon over the chicken, add 2 teaspoons of water and return to the heat, stirring until the mixture is mixed and begins to thicken again.
6. To serve, remove the foil and top the cheese with tomato and fresh basil. Drizzle with the balsamic reduction.

- 2 tbsp Swerve brown sugar substitute
