This recipe fits in so many dietary restrictions. It’s completely vegetarian. It does use butter, but you can use a vegetarian option like Earth Balance to stay compliant.
If you swap ghee for the butter, this is also a Whole30 side dish too. This is the perfect recipe to make when you invite someone over and don’t know their food allergies or eating restrictions. It’s amazing!
How To Make Garlic Butter Cauliflower Rice
The entire recipe is at the bottom of this post – but before we get to that, I want to share some tips and ideas that will give you the best cauliflower rice ever.
What’s In It
Here’s what I put in my garlic butter cauliflower rice:
- Cauliflower Rice – I used frozen cauliflower rice. It saved me lots of time.
- Butter
- Garlic Cloves – If you don’t have garlic cloves or minced garlic, you can use garlic powder. The garlic cloves give it a more robust flavor.
- Salt and Pepper
- Chili Powder
- Parsley – Fresh chopped parsley has a much better flavor and, it looks really pretty on the rice. You can use dried parsley as a substitute.
- Lemon Juice – Fresh-squeezed lemon juice has the best flavor. Use lime juice as a substitute.
Topping Ideas
Another fantastic thing about this recipe is that you can add different toppings and make it taste completely different. It’s an easy dish to customize.
If you are on the keto diet, I recommend using these toppings because they are naturally low-carb.

- Parmesan Cheese
- Chopped Bacon
Low-Carb Cauliflower Rice Mix-Ins
