Cauliflower Mock Potato Salad
Just because you are on the keto diet, doesn’t mean you have to totally give up your favorite types of food – you just have to find creative ways to make them with low-carb ingredients.
This mock potato salad has the same classic flavors and texture as your favorite cookout side dish. The dressing is made with mayo, mustard, relish, and apple cider vinegar – just like that popular potato salad is!
The only difference is, I didn’t use potatoes in it. Potatoes are super high in carbs and will kick you out of ketosis so fast. So, I found some veggies that mimicked the taste and texture of potatoes, and it worked!

Loaded Fauxtatoes
Have you heard that word before? What are fauxtoatoes anyway? It’s a play on the world faux – or fake. Instead of potatoes, I used a combination of cauliflower and radishes. So, what you have is fake potatoes (that are made with whole, fresh ingredients) that are loaded with a zesty mayo dressing and topped with crispy bacon pieces. It’s so good!
Easy Cauliflower Side Dish
This super-easy recipe is perfect for summer sides or meal prep. Yes, make a huge batch of it and save some in your meal prep containers. It will stay fresh for up to 5 days. Since it’s a cold salad, you won’t have to heat it up.
In fact, since it has hard-boiled eggs in it, you could just eat this with a small bit of salmon or cooked chicken and you have a complete meal for lunch.
Potato Salad Alternatives
This is one of my favorite alternatives to potato salad because it has so many different toppings you can add to it. It’s such a fun recipe to customize and change up.
I used bacon and green onion on top of my potato salad. Here are some more things you could add on top:
- Jalapeno Slices
- Chives
- Fresh Dill
- Sprinkle Paprika
- Sprinkle Chili Powder

There are so many amazing keto side dishes that you can make – the keto diet is definitely not boring. I like how this is a cold salad that you can serve at cookouts or big dinners.
Some of my other favorite keto sides are loaded oven-roasted radishes, Mexican street cauliflower, low-carb cheesy asparagus. It’s so fun to try new recipes and add them to your meals. All you need is some veggies and amazing spices.
Keto Faux Potato Salad
Not only does the dressing taste like classic potato salad, but the radishes give it a potato texture. I added the radishes because no matter how much imagination you have, cauliflower does not feel like potatoes when you bite into them! But radishes really can pass as a cousin to potatoes.
Since this is a cold salad, you can store it in an airtight container in the refrigerator. It will stay fresh for up to 5 days.
Keto Cauliflower Potato Salad Recipe

INGREDIENTS:
Cauliflower
Celery stalks
Radishes
Eggs
Salt & pepper
Bacon
Chopped green onions
DRESSING:
Mayo
Dijon mustard
Relish
Apple cider vinegar
INSTRUCTIONS:
Roughly chop the cauliflower. Place in a pot and cover with water.
Bring water to a boil. Once it is boiling, cook for another 2 minutes, then drain and let cool.
Chop the cauliflower into bite sized pieces, along with celery, radishes and hard boiled eggs.
In a small bowl, whisk together ingredients for the dressing.
Place all the chopped ingredients in a large bowl. Top with dressing and toss well.
Add salt & pepper to taste.
Garnish with crumbled bacon and chopped green onions.
