Garlic Cauliflower Mashed “Potatoes”

Mashed potatoes are a classic side dish for family meals. I remember eating them all the time as a kid. This recipe doesn’t have any potatoes in it! Nope! Instead, I mashed up cauliflower florets. Even the most skeptical person will try it and agree it’s delicious. 

Keto Garlic Cauliflower Mash Recipe

It might not have the exact same texture as potatoes, but it’s seriously close! The secret is the garlic cloves and butter. If you want it to be creamier, add more butter. Don’t skimp on the garlic. This is what elevates this dish to “amazing” status! 

Cauliflower Mash

Cauliflower is one of the healthiest vegetables you and your family can eat. It’s low in carbs, high in fiber, and is an excellent source of vitamin C and K. The garlic and butter combine to create a dish that is so tasty even your kids will love it.

I’ve made keto cauliflower mashed potatoes before. That recipe has milk in it – so if you want it creamier, try that recipe. This one is even easier because it’s made with just garlic, butter, and cauliflower. This one has a bolder flavor which is why I happen to enjoy it a little more.

This recipe works perfectly for meal prep too. Store it in an airtight container in the refrigerator. It will last about 5 days and tastes delicious when you reheat it.

INGREDIENTS:
Cauliflower
Garlic cloves 
Butter
Salt & pepper 
Fresh parsley

INSTRUCTIONS
1. Roughly chop the cauliflower and place in a large pot with garlic cloves.


2. Add enough water to cover ingredients.  Boil for 12-15 minutes, or until the cauliflower is tender.


3. Drain water.


4. Using an immersion blender or potato masher, mash the cauliflower and garlic until smooth.


5. Stir in butter, salt & pepper.


6. Top with fresh parsley if desired.
7. ENJOY!

  • 1 head cauliflower
  • 5 garlic cloves
  • 2 tbsp butter

Instructions
 

  • Roughly chop the cauliflower and place in a large pot with garlic cloves.
  • Add enough water to cover ingredients. Boil for 12-15 minutes, or until the cauliflower is tender.
  • Drain water.
  • Using an immersion blender or potato masher, mash the cauliflower and garlic until smooth.
  • Stir in butter, salt, and pepper.
  • Top with fresh parsley if desired.
