INSTRUCTIONS
1. Roughly chop the cauliflower and place in a large pot with garlic cloves.
2. Add enough water to cover ingredients. Boil for 12-15 minutes, or until the cauliflower is tender.
3. Drain water.
4. Using an immersion blender or potato masher, mash the cauliflower and garlic until smooth.
5. Stir in butter, salt & pepper.
6. Top with fresh parsley if desired.
