This keto cheesy sausage and peppers recipe is an easy Italian skillet dinner that you can make for the entire family or for meal prep.
Cheese-topped casseroles are some of my favorite family dinners. Back before I started the keto diet, I used to make casseroles with noodles.
In fact, they were such a staple to all my casserole dishes, that I was kind of worried that a noodle-free casserole would even work. Thankfully, this recipe is amazing! My family didn’t even miss the noodles!
Low Carb Sausage & Peppers
Few things go together quite as well as sausage and peppers! I love the spice from the sausage and how it enhances the natural zing from the peppers. The sausage is such a filling meal that it makes this casserole a hearty dinner.
One of my favorite things about this casserole is that it is what I like to call a “make once eat twice” meal. I make this for my family and then store extras in the refrigerator to eat the rest of the week for lunch.
The best way to store it is in your favorite meal prep container with a lid. It will stay fresh in the refrigerator for up to a week this way. If you heat it up and think it needs a better texture, sprinkle more cheese on top.
Keto Italian Sausage Dinner
The best thing to serve with this scrumptious meal is some cauliflower rice and zucchini noodles. You can also remove the stems and seeds from bell peppers and use this recipe as stuffing inside stuffed peppers.
You can also serve it with a chopped green salad and your favorite soup. This is a wonderful meal when you want something that is really easy to throw together.
Save yourself time in the kitchen by slicing the peppers ahead of time and buy parmesan cheese that is already grated. You can also use frozen chopped onion too.
If you can’t find Italian sausages, you can use Polish or Kielbasa sausages instead. Both work just as well.
Sausage Casserole Dinner
This dinner is really kid-friendly because it has so much cheese! My kids also love any meal I make with Italian sausages – they are always a hit. Plus, you will love how quickly this entire meal comes together.
All you have to do is brown the sausage and saute the veggies. Then, make the creamy sauce in the skillet and put them all together in a casserole dish, and bake it until the cheese on top melts.
If you have a cast-iron skillet, you can put that into the oven to melt the cheese – you don’t even need a separate casserole dish.
Italian Sausage With Cheese
If you need a budget-friendly meal, this is perfect! Bell peppers are a very affordable fresh vegetable.
You don’t need very many Italian sausages to feed your entire family either. All of this together costs less than one meal at a restaurant – plus you will have leftovers for lunch.
Add some red pepper flakes for a little extra spice! There are lots of ways you can customize this meal to make it taste just how you like it.

Ingredients:
Italian sausage
Red bell pepper
Green bell pepper
Onion
Beef broth
Heavy whipping cream
Tomato paste
Italian seasoning
Grated Parmesan cheese
Mozzarella cheese
Salt and pepper
Instructions:
1. Preheat the oven to 350 degrees.
2. Cook the sausage in an ovenproof skillet over medium high heat on the stove until completely cooked through. Remove and set aside.
3. Reduce the heat to medium, add the vegetables to the skillet and saute until just becoming tender. Remove and set aside.
4. Drain the grease from the skillet.
5. Add the beef broth to the skillet to deglaze it.
6. Whisk in the heavy whipping cream, tomato paste, Italian seasoning and salt and pepper to taste.
7. Saute until the sauce thickens.
8. Stir in the parmesan cheese.
9. Add the meat and vegetables back to the skillet and toss to coat in the sauce.
10. Sprinkle the mozzarella cheese on top and bake for 10-15 minutes until the cheese is melted.

- 1 Red Bell Pepper Sliced
