Cottage Cheese Muffins
When my kids heard I was making muffins with cottage cheese, they didn’t know what to think. Did you click this recipe out of sheer curiosity, too? Well, just like I told them, they don’t taste like cottage cheese at all!
In fact, they taste like pepperoni muffins, or mini pizzas! After you puree the cottage cheese, it becomes super smooth and adds moisture to the muffins.
This is the perfect recipe for back to school lunches, work lunches, or to keep in your refrigerator whenever you’re feeling snacky. With just 3 grams net carbs in each muffin, you can eat two or three of them for dinner.
Keto Pizza Muffins
Since these are pizza muffins, get creative with them and use your favorite pizza toppings! I used only pepperoni slices but you can add some olives, replace the pepperoni with crumbled sausage, or add some diced jalapenos for some heat!
Then, don’t forget about the dip! Either sugar-free marinara sauce or some ranch dressing will taste amazing with the keto pizza muffins.
Keto Cottage Cheese Muffins
When you’re making the muffins, I suggest using silicone cupcake liners. If you don’t have silicone, paper ones will work really well, too.
The muffin batter will stick to your muffin tin, so the liners are a must! And don’t forget to use almond flour, not almond meal.
If you use almond meal, the muffins will have a grainy texture to them.
Can you use coconut flour instead? I don’t recommend it. Coconut flour will make the muffins drier, since it soaks up more moisture as it bakes.
What To Eat With Pizza
If you like spice, then add some keto jalapeno popper chicken salad to the side with the pizza muffins. Or serve them with some low-carb red bell pepper jalapeno poppers.
They are a fun way to eat more veggies. Since the muffins are a finger food, you could make some keto dill pickle chicken fritters on the side with them.
Mimic the ingredients and make a low-carb cottage cheese pizza dip! You can even dip the muffins into the pepperoni cheese sauce.
How To Store Muffins
Store the muffins in an airtight container and keep them at room temperature. For best results, eat them with in three or four days.
You can freeze the muffins, too! Place them in a single layer on a baking tray and put them in the freezer.
Once they are frozen solid, put them in a freezer-safe food storage bag. Keep them in the freezer for up to six months.

Ingredients
- Cottage Cheese
- Almond Flour
- Eggs
- Shredded Mozzarella Cheese
- Garlic Powder
- Onion Powder
- Italian Seasoning
- Pepperoni Slices
Directions
Preheat the oven to 350 degrees. Add the cottage cheese to a food processor, and pulse until smooth.
Place the cottage cheese into a mixing bowl with the almond flour, eggs, mozzarella cheese, garlic powder, onion powder and Italian seasoning. Whisk to combine well.
Fill a well greased or cupcake liner lined muffin tin ½ full with the batter.
Add a few slices of pepperoni on top of the batter in each section of the muffin tin.
Top the pepperoni with another layer of the batter, filling the sections about ⅔ of the way full.
Bake for 25 minutes, or until cooked completely through. Let the muffins cool before serving.

Instructions
