I’ve made keto bacon egg cups and keto sausage egg and cheese bites before. Baking eggs in a muffin tin is super simple and I love how easy it is to make a bunch of them all at once but I haven’t tried to make any with broccoli in them yet.
I didn’t want the grassy flavor of broccoli to stand out too much. Turns out, cottage cheese is the secret ingredient.
When you add cottage cheese, the tangy flavors almost sweeten the broccoli florets. And I still kept the recipe to just six ingredients.

Easy Egg Muffins
There are just 2 grams net carbs in each cheesy egg muffin, so enjoy a few of them for breakfast or lunch. You can even double the recipe, make an extra big batch of them, and then save them to eat throughout the week.
I love eating egg muffins on those busy mornings when I need a protein boost but don’t have time to cook. I just reheat them in the microwave and eat a few of them with a cup of hot coffee. It’s the best way to start my day.
Keto Egg Muffins
There are a lot of different ways to customize these simple egg muffins, too! Change up the recipe and make it taste exactly how you want it to.
Here are a few of my favorite ways to change this recipe.
If you don’t like cottage cheese, then use ricotta cheese. It’s thicker, creamier, and has a richer flavor.
Change the type of cheese that you use. Shred some pepper jack to give the cheese cups some heat.
And you can always use cooked crumbled sausage instead of bacon.
What To Eat With Eggs
Cottage cheese egg muffins are tasty enough to eat for any meal. If you’re going to eat it for breakfast, make some Keto Ricotta Pancakes or 90 second Keto French Toast on the side with it.
You don’t have to eat it for breakfast, though! If you want to enjoy a cottage cheese egg muffin for lunch or dinner, make some bacon avocado fries, cauliflower rice, or radish salad on the side.
How To Store Egg Muffins
Bake the egg muffins and then let them cool completely to room temperature. Then, store the cooked cottage cheese egg muffins in an airtight container and keep them in the refrigerator.
Eat them within three days for the best results.
You can freeze them, too. Wrap each egg muffin in plastic wrap and then keep them in a freezer-safe food storage bag.
Eat them within 6 months for the best taste and texture.

Directions
Preheat the oven to 350 degrees. Place some broccoli into the bottom of each section of a well greased muffin tin.
Add some of the bacon and then cheese on top of the broccoli in the muffin tin sections.
Whisk together the eggs, cottage cheese, minced garlic and salt and pepper to taste in a mixing bowl.
Pour the egg mixture into the muffin cups until they are nearly full. Bake for 25 minutes, or until the muffins are cooked through.
Let cool before removing from the muffin tin to serve.
