Ever since I made my first zucchini fritters, I fell in love with the concept of making fried cakes that are actually good for you. I just can’t get over how delicious they are!
They’re crispy on the outside, hot and savory on the inside. And there are so many different ways to make them!
You can either bake them in the oven, fry them on the stove, or make Keto Air Fryer Fritters. But the best thing about them is that they are low-carb.
In fact, each dill pickle chicken fritter has less than one gram of carbs! This makes them the perfect anytime food. Snack, lunch, dinner, appetizer – they are good any time that you want them.
Keto Chicken Fritters
These dill pickle chicken fritters are popping with flavor – and not just from the dill pickle juice and chopped dill pickles. The fritters are also spiced with some ranch seasoning, too.
Feel free to change things up with this recipe. Chop up some spicy pickles to give it some heat or make some Keto Cheesy Chicken Fritters for something that’s a bit milder.
Always practice food safety. Before you serve them, use a food thermometer to make sure they’re fully cooked.
You will know they are fully cooked when the internal temperature is at least 165F.
Keto Breadcrumb Replacement
Most fritters are deep-fried and made with flour. These are air fried and completely gluten-free.
Instead of breadcrumbs or flour, I used almond flour. The almond flour fortifies the fritters with more protein and gives them a stronger structure at the same time.
If you’re allergic to almonds, you can use ground up pork rind crumbs instead. Use the same amount of both.
What To Eat With Chicken Fritters
If you are going to serve them as an appetizer, I suggest making the fritters bite-sized. Then, serve them on a tray with toothpicks.
They will taste amazing with some keto BLT egg sliders, Salami roll-ups, and some keto spinach balls.
Or, eat the crispy fritters for lunch. Serve them with egg salad or your favorite chopped green salad. You can also make some rosemary dinner rolls with them for a light dinner.
How To Store Chicken Fritters
I like to eat these keto chicken fritters for lunch. They are easy to store and use in your weekly meal prep.
If you store them in an airtight food storage container in the refrigerator, they will stay fresh for up to 3 days.
Then, just reheat them in the air fryer again. They will be nice and crispy, just like the day you made them.

- 1/4 cup Finely Ground Dill Pickles
- 1 tsp Dill Pickle Juice
- 3 tsp Ranch Seasoning
- 1 cup Colby Jack Cheese shredded
- 1 large Egg
