I took this classic recipe and made it healthier. It’s not just better for you or lower in carbs, but it is bursting with more flavor than ever before too! With fresh mushrooms, heavy whipping cream, cream cheese, and nutty parmesan cheese, the flavors are bolder!
I even recreated the crispy topping by using pork rind crumbs. They are a low-carb replacement for fried onions and have no carbs!

There is so much going on in each bite, too! The crispy bacon, earthy mushrooms, and fork-tender green beans are all smothered in a rich and filling cream cheese sauce. Even kiddos that don’t usually like to eat veggies will love this casserole.
Green Beans With Bacon
When you buy bacon, don’t just grab the cheapest pack on sale. Make sure that the kind you’re buying doesn’t have added sugar in it. If it says “maple-cured” it’s best to skip it.
You can use any type of green beans that you want. Fresh green beans will have the best flavor and texture. They are perfectly crispy! Canned green beans are often too soft, but kids love them.
If you use frozen green beans, I suggest letting them thaw and dabbing them with a paper towel before you bake them.

Ingredients:
Sliced mushrooms
Butter
Green beans
Bacon
Heavy whipping cream
Cream cheese
Minced garlic
Parmesan cheese grated
Pork rind crumbs
Salt and pepper
Instructions:
Steam the green beans until a crisp tender, and place into a well greased 9×13 baking dish.
Preheat the oven to 350 degrees.
Add the butter to a saucepan over medium heat.
Stir in the mushrooms, and saute until becoming tender.
Mix in the garlic, and cream cheese. Stir until the cream cheese has melted.
Pour in the heavy whipping cream, and simmer until the sauce thickens.
Add salt and pepper to taste, as well as the bacon.
Pour the sauce over the green beans, and stir to combine.
In a bowl, mix together the pork rind crumbs and the parmesan cheese.
Sprinkle the mixture over the green beans.
Bake for 20 minutes.
Let rest 5 minutes before serving.
