There are just six simple ingredients – and they’re ones you probably already have in your pantry. Since you bake the cod, you don’t have to worry about flipping the delicate fish in the skillet.
But the best part of this easy cod recipe is that you don’t have to deal with messy egg and flour mixtures for the breading. You’re only going to make one side crispy, so you just drizzle it with olive oil and add the pork rind mixture on top.

The parmesan crusted cod tastes like an Italian food-lover’s favorite fish dish! If you want to enhance the flavor even more, mince fresh garlic cloves and add some onion powder.

Cod comes in a large, floppy fillet. I suggest cutting it into equal-sized pieces.
Not only does it look better, but they will all bake at the same rate, too. If you don’t, then the thinner pieces might burn while the thicker pieces are still raw.
How To Get Rid Of Fishy Smell From Fish
Cod is a pungent fish. There are a couple ways to minimize the fishy smell. The most effective (and best) way is to rinse your cod, pat it dry with a paper towel, and then add lemon juice to the fish.

Brush the lemon juice on the fish so it soaks into the meat. Rinsing and adding lemon juice cuts down the odors.
While it bakes, maybe keep a window open, with a fan sucking the air out of the room. After you’re done cooking, wash up everything and take out the trash.
If you do all this, your kitchen shouldn’t smell like fish.
What To Eat With Fish
Parmesan crusted cod has a noticeable Italian flavor, so serve it with your favorite Italian side dishes. Some keto garlic knots or low-carb rosemary rolls will be the perfect things to eat with cod.

A bowl of cauliflower rice will also taste absolutely delightful with the flaky white fish. If you like pasta with your fish, then prepare some palmini noodles or zucchini noodles with it.
How To Store Cooked Fish
Since it has such a strong odor, I suggest making sure that your containers are airtight. Then, eat the cod within two or three days.

I don’t recommend trying to freeze the fish. When you reheat it, the texture will change and it won’t be as crispy.

Directions

Preheat the oven to 350 degrees.
Place the cod fillets in a greased 9×13 baking dish. Drizzly the fillets with olive oil, and season with salt and pepper to taste.

In a mixing bowl, combine the pork rind crumbs, parmesan cheese, garlic powder, butter and Italian seasoning.
Press the crumb mixture onto the top of each Cod fillet.

Bake for 20 minutes, or until cooked through and crispy on top.
Garnish with chopped parsley if desired before serving.
