One of my favorite types of soup is lemon. I just adore the zesty flavors and the way all the spices compliment each other. Whenever I am in the mood for something that will fill me up while also refreshing me, this is the recipe I go reach for first.
There are only a few steps and the entire recipe takes about 30 minutes. That’s faster than takeout! So, get ready to meet your new favorite soup.

This soup uses all whole ingredients, so it is a really healthy soup that is packed with nutrients.
Celery and kale are both amazing sources of fiber, but kale is known for being high in iron and antioxidants. Lemon is a fantastic source of vitamin C – so enjoy this soup in the spring when your allergies are the worst.
It will help you feel hydrated and healthy.
Not only is it healthy, but it is filling too. I used both heavy whipping cream and parmesan cheese in the soup to make it thick and creamy. Whenever I use them together, I don’t need to eat a lot to feel full.
This soup can also be made with premade shredded rotisserie chicken to save you even more time.

This is a fantastic soup for meal prep because is stores so well. One thing I should tell you – when you store it in the fridge, the cream and parmesan cheese might harden. All you have to do is heat it up on the stove (or in the microwave) and it will melt and become creamy again.
The best way to store soup is in a container that seals really tight. I like to test my sealed containers over the sink to check for leaks.
The easiest meal prep containers for soup are mason jars! Their lids seal really well and they are easy to clean.

Shredded chicken
Medium onion
Celery
Butter
Garlic
Italian seasoning
Lemon zest
Fresh squeezed lemon juice
Kale
Chicken broth
Heavy whipping cream
Parmesan cheese
Salt and pepper
Instructions:
1. Place the butter into a saucepan over medium heat on the stove.
2. Add the onion and celery to the saucepan, and saute until becoming tender.
3. Stir in the minced garlic, lemon zest, Italian seasoning and lemon juice.
4. Whisk in the chicken broth, heavy whipping cream and parmesan cheese.
5. Cover, and bring the mixture to a low boil.
6. Add in the chicken and kale, and simmer over low heat for 15-20 minutes.
7. Mix in salt and pepper to taste and serve.

- 1/2 Medium Onion chopped
- 1 cup Celery chopped
- 2 tbsp Butter unsalted
- 2 tsp Garlic minced
- 3 tsp Italian Seasoning
- 2 tsp Lemon Zest
- 1 tbsp Lemon Juice Fresh-Squeezed
- 3 cups Kale chopped
- 3 cups Chicken Broth
- 1 cup Heavy Whipping Cream
- 1/2 cup Parmesan Cheese grated
Instructions
