Creamy Keto Tuscan Soup
Have you ever had a truly amazing Tuscan soup? My low-carb version still has all the classic Italian Tuscan soup flavors. Another term for this soup is Zuppa Toscana. It is normally made with kale, zucchini, cannellini beans, potatoes, tomato, chili, and Italian bacon.
To make a low-carb version, I used all keto-friendly ingredients. It still has the same rich flavor – and I still used kale for that same taste.
Ground Sausage Recipes
I love using ground sausage in my recipes. It adds spice to the dish without adding more carbs. In fact, my keto zucchini and sausage skillet recipe comes together in just a few minutes. It’s also the perfect thing to use in spicy meatballs.
Don’t stop at the ground sausage. You can also make this soup with ground chicken or turkey.

Keto Tuscan Soup
This keto Tuscan soup is rich and creamy and will fill you up. If you are looking for something to enjoy for lunch, then make this ahead of time – it stays fresh in the refrigerator for up to a week.
Since this is such a filling soup, you only need to serve it with your favorite chopped salad and some veggies. Then, it’s a complete meal!
Meal Prepping Soup
Soup is one of the easiest things you can make for meal prep. It stores really well in the refrigerator. Then, all you have to do is reheat it and lunch (or dinner) is ready for you!
The best way to store this soup is in an airtight container. It will stay fresh in the refrigerator for up to five days.
You can also freeze this soup and store it long-term. Freeze it in a gallon-sized resealable freezer-safe bag. Lay it flat on a cookie sheet and put it in the freezer until it is frozen solid.
Then, you can take the baking sheet out and just place the frozen soup anywhere in your freezer. It will stay fresh for up to 6 months.
When you are ready to enjoy your frozen soup, let it thaw overnight in the refrigerator and then reheat it in a saucepan on the stove.

This soup is really easy to make on the stove top. You basically just mix all the ingredients in a saucepan and let it cook until it is nice and hot. This is such an easy recipe to make that you can even cook it while distracted with kiddos.

Ingredients:
- Ground Italian Sausage
- Medium Onion, chopped
- Minced Garlic
- Italian Seasoning
- Dried Basil
- Chicken Broth
- Kale
- Heavy Whipping Cream
- Parmesan Cheese
- Bacon
Instructions:
Cook the meat and onion in a saucepan over medium high heat on the stove until the sausage is browned and the onion is tender. Drain any excess fat.
Reduce the heat to medium and stir in the Italian seasoning, garlic, basil and salt and pepper to taste. Saute for 30 seconds.
Pour in the chicken broth, cover and bring to a low boil.
Stir in the kale and cook until tender.
Whisk in the heavy whipping cream, bacon and parmesan cheese.
Simmer for 5-10 more minutes before serving.

- 4 cups Kale Roughly Chopped
- 1 cup Heavy Whipping Cream
- 1/4 cup Parmesan Cheese Grated
- 1/4 cup Bacon Crumbled
Instructions
