Growing up we almost always had rice and beans with some sort of meat for dinner. It’s still is my favorite dinnertime recipe however it’s not often I make it. I use the same spices to season cauliflower rice, which is my go-to rice substitute.

Keto Mexican Cauliflower Rice is quick and easy to make thanks to the frozen cauliflower I use!
You can, of course, rice the cauliflower yourself but I think the texture in microwaved cauliflower is more similar to rice. I tried doing it myself several times but I could never get it quite right and was so grateful when frozen cauliflower rice (we use this one) became available at grocery stores.

Absolutely! You can make and store your Mexican cauliflower rice for up to 4 days! It reheats wonderfully and it’s perfect for meal prep!
Mexican Cauliflower Rice Ingredients
Serve 4
2 bags frozen cauliflower rice
1 tsp olive oil
Diced onion – 1
Paprika – 1 1/2 tsp
Cumin – 1 tsp
Garlic – 1 crushed clove *can also use garlic powder
Salt – 1 tsp
1 Juiced Lime
Cilantro – 2 tbsp
Optional: For a spicy kick add a pinch or two of cayenne pepper
How To Make Mexican Cauliflower Rice
Add oil to skillet.
Cook cauliflower rice according to instructions on the package and drain any excess liquid.
Throw in onions and garlic and cook until soft.
Stir in cauliflower rice.
Top with seasoning, stir and cook for 3-5 minutes.
Stir in lime juice and cilantro. Top with avocado, jalapenos, and chicken for a complete low carb meal!

- 2 bags frozen cauliflower rice
- 1 tsp olive oil
- 1 diced onion
- 1 1/2 tsp paprika
- 1 clove garlic or 1 tsp of garlic powder
- 1 tsp salt
- 1 juiced lime
- 2 tbsp cilantro
Optional
- pinch or two cayenne pepper
Instructions
