Then, wrap each cup in plastic wrap and place them in a resealable plastic food storage bag. This way, they won’t stick together in a frozen clump!
You can just grab individual cheesecake cups when you want one and let them thaw.
Storing them in the refrigerator is a wonderful idea if you think you’ll eat them within a week or so. They will stay fresh in the refrigerator for up to a week. After that time, the texture and taste will start to deteriorate.

Coconut oil
Cream cheese
Sour cream
Swerve confectioners sugar substitute
Vanilla extract

Instructions:
1. Place the baking chips and coconut oil in a bowl that is microwave-safe. Heat the chocolate at 30-second intervals until melted and well combined.
2. Fill 12 sections of a mini muffin tin with mini cupcake liners.
3. Pour the chocolate into the cupcake liners until they are about ⅓ of the way full.
4. Place the tray in the fridge to allow the chocolate to set.
5. In a mixing bowl, combine the cream cheese, sour cream, Swerve sweetener, and vanilla extract. Beat until smooth and creamy.
6. Fill the cupcake liner the rest of the way full with the cheesecake mixture.
7. Sprinkle some crushed sugar-free peppermint candies on top, and chill in the fridge for several hours until set.
