One of the most iconic flavors of the holiday season is gingerbread! From the cute little gingerbread houses to the smell of fresh-baked gingerbread men in the oven, this is one of my favorite scents. That’s why I knew I had to find a way to make a gingerbread-flavored cheesecake too.

These keto no bake desserts are perfect for the holidays. You can save them for yourself to snack on when you are feeling run down, tired, or just in the mood for something sweet! Or, make a larger batch and share them with your friends and family at holiday parties. Everyone is going to adore them!
Low Carb Gingerbread Cheesecake
If you want to make this ahead of time, I suggest storing it in the freezer. This will keep the texture intact and prevent the cheesecake layer from soaking into the low-carb crust. Don’t forget to seal it tightly before you place it in the freezer. It will last about 3 months in the freezer.
You can also store this in the refrigerator too. Seal it in an airtight container. It will stay fresh and taste the best if you eat it within 3 days.

This is made with all the classic gingerbread flavors and your favorite cheesecake ingredients. Here is what I used in my cheesecake:
- Cream cheese
- Powdered sugar substitute
- Whipped topping (sugar-free)
- Sugar-free maple syrup
- Gingerbread seasoning
I made my own gingerbread seasoning. Here’s what I put in it:
- Ginger
- Cloves
- Allspice
- Nutmeg
- Cinnamon

My go-to holiday treat are no bake bars. You can slice them really small and feed a crowd! No one will be able to tell they are sugar-free – you might want to make a double batch if you think you will be sharing them at a party.

Keto No Bake Gingerbread Cheesecake

Crust Layer-
Almond flour
Sugar-substitute powdered sweetener
Butter
Gingerbread
Cheesecake Layer-
Cream cheese
Sugar-substitute powdered sweetener
Whipped topping
Sugar free maple syrup
Gingerbread spice
Gingerbread Seasoning-
Ginger
Cloves
Allspice
Nutmeg
Cinnamon
Topping-
Sugar free peppermints
INSTRUCTIONS:
1. In a small bowl, whisk together gingerbread seasoning ingredients. Set aside for now.
2. To create the crust layer, mix together the almond flour, powdered sweetener and ½ tsp of gingerbread seasoning.
3. Top with melted butter and stir so that all the dry ingredients are coated with butter. Pour the mixture in a parchment paper lined baking dish or pan. Press the crust down firmly. Set aside.
4. To create the cheesecake layer, mix together the cream cheese and powdered sweetener until you have a smooth texture. Add sugar free maple syrup and 1 ½ tsp gingerbread seasoning.
5. Fold in the whipped topping, then pour on top of the crust.
6. Top the bars with broken peppermints. Place the bars in your freezer to set, about 3 hours.
7. Remove and slice. Store in an airtight container back in the freezer or refrigerator until you are ready to serve.
