Once in a while I come up with a recipe that is just so good, so out of the world amazing, that I can’t wait to tell you! This is one of those recipes. I had a feeling that pumpkin alfredo would taste delicious, but I had no idea it would be such a hit with my family too.

This recipe only uses on skillet. I love saving time doing dishes, don’t you? As if that wasn’t enough reason to love it, it’s also packed with tons of heart-heatlhy ingredients. Even the pickiest family members asked for seconds – so that’s saying something.

Creamy Keto Chicken

One of the easiest things to create on the l0w-carb diet is a creamy sauce. Heavy whipping cream and cream cheese are both low-carb and high in fat – which is exactly what you want to eat.

Here’s what I used in my recipe – you’ll find all the exact measurements in the printable recipe card at the bottom of this post.

  • Chicken Thighs – boneless and skinless since you will be cutting the meat into bite-sized pieces. You can use chicken breast instead of chicken thighs.
  • Mushrooms – Use your favorite variety.
  • Spinach – Raw is best because it will wilt better in the skillet
  • Butter – unsalted
  • Garlic – fresh minced will have the best flavor
  • Heavy whipping cream 
  • Pumpkin puree
  • Parmesan Cheese – use fresh grated cheese for the best flavor.

Before you start calling me basic, you gotta try this recipe. Honestly, the pumpkin puree is perfect with the heavy whipping cream. It gives the chicken a rich flavor. It also sweetens the creamy sauce without any added sugars.

Creamy Pumpkin Mushroom and Spinach

Even if you don’t think that you enjoy eating mushrooms, add them to this skillet. They add a depth to the flavor that rounds out the sweetness from the pumpkin and heavy whipping cream.

I love how beautifully the spinach wilts and retains its vibrant green color. Spinach is a superfood, it’s packed with iron and vitamins that kids and adults both need.

How To Store It

Just store everything – the chicken and the creamy pumpkin sauce – in a sealed container. It will stay fresh in the refrigerator for up to 4 days.

How To Change This Recipe

There are small things you can change to this recipe to customize it for you. This is one of the best low carb comfort foods, so do whatever you can to perfect it. You are going to love it.

One thing you can do is top it with salty and crunchy bacon. If you want it to have a bit more spice, add some sliced jalepeños.

You don’t really need very much else since this already has mushrooms in it – it’s a pretty filling dinner.

Chicken Pumpkin Alfredo Recipe

Cook Time: 20-30 minutes

Net Carbs: 5 net carbs per serving

Ingredients:

Olive oil
Boneless skinless chicken thighs
Mushrooms
Spinach
Butter unsalted
• Garlic
• Heavy whipping cream
•Pumpkin puree
• Parmesan cheese grated
• Salt and pepper

Instructions:

Heat the olive oil in a skillet over medium high heat on the stove.


Add the chicken to the skillet, and saute until almost cooked through.


Put the mushrooms in the skillet, and saute until the chicken is cooked completely and the mushrooms are tender.


Toss in the spinach and saute until it is wilted. Add salt and pepper to taste.

Remove the mixture from the skillet.


Reduce the heat to medium, and add the butter and garlic to the skillet. Saute for 30 seconds.


Pour the heavy whipping cream and pumpkin puree into the skillet. Whisk to combine completely.
Continue to cook the sauce down until it begins to thicken.


Mix in the grated parmesan.
