Tomato Mozzarella Salad
Making this tomato mozzarella salad is really easy! All you have to do is slice the tomato into thick slices and arrange them onto a plate with the sliced mozzarella cheese. Drizzle your salad with olive oil and then top with the balsamic reduction (see how to make below). Add salt and pepper to taste and sprinkle with basil.
Balsamic Reduction:
Simply bring 1 cup of balsamic vinegar to a boil. Once boiling, you can reduce and allow the vinegar to simmer for about 5-7 minutes or until the vinegar has reduced down. It will be ready when the vinegar has thickened and starts to stick to spoon.**Make sure to keep a close eye on the vinegar and stir.
Ingredients:
3 large tomatoes
8 ounces of mozzarella cheese
1/4 cup of olive oil
Salt and pepper
Fresh basil
1 cup balsamic vinegar
Instructions:
Place sliced tomato on plate and alternate with mozzarella cheese.
Top with olive oil, salt and pepper.
Drizzle with balsamic vinegar.
