Perfect for a Halloween party or a fun fall lunch! Keto spider cucumber appetizer bites are easier to assemble than you might think.
Halloween Spider Food
These are the cutest little edible spiders! Who knew that olives could become spider legs on cucumbers? Your kids will enjoy making them with you. When kids make their own snacks, they are more likely to eat them too.
These little spider snacks are super healthy. Each one only has 2 grams net carbs. Cucumbers are a fantastic source of fiber and antioxidants. Olives are high in healthy fats and vitamin E (which is fantastic for your skin).
Cream cheese and sour cream are both high in calcium and healthy fats.
These are basically a delicious and cute fat bomb.
Cucumber Appetizer Bites
I used a classic combination of garlic and onion powder to spice up these cucumber appetizer bites. I added some dried chives for a bolder flavor. If you want to make them taste even better, try sprinkling in some fresh dill leaves.
You don’t have to use a piping bag to add the cream cheese and sour cream mixture, but it really makes the entire process a lot easier! Using two spoons to scoop the mixture is a messy endeavor.
If you don’t have a piping bag, you can use a Ziploc bag and just cut the corner off.
Cucumber Halloween Snack
I used cucumbers as the body of the spiders because they are super low in carbs and have a mild taste that lets everything else stand out. You don’t have to use cucumbers; there are other veggies you can use instead.
Cut a bell pepper into round circles for the body; you could also roast some zucchini or squash slices and then use them as the body of the spider.
Not everyone enjoys olives, either. Instead of olives, slice some banana peppers into the legs. Or use some raw bell peppers sliced into thin legs.
Cucumber Bites
If you want to make these cucumber bites ahead of time, I suggest only making them a day in advance. Don’t leave them in the refrigerator too long or else the cucumber will begin to soak up the cheese mixture.
Store cucumber bites in an airtight container to prevent them from drying out.
If you want the cucumber bites to have a bit of spice to them, slice and use jalapeno peppers for the legs instead of the olives. Sprinkle some cayenne pepper into the cheese mixture for even more kick.
Healthy Halloween Appetizer
