Growing up, mi mamá always made us individual servings of shrimp ceviche during Lent. I never quite understood why she would serve them individually, but it felt fancier compared to other dishes we would normally have, and for that reason alone, I would always look forward to it. My mom would head to a seafood market and buy fresh shrimp that she would douse in Clamato The Original, a staple item that we now use in our house to give many dishes and drinks a fresh twist of flavor and color! Nowadays my husband and I, who happen to be a HUGE fan of shrimp ceviche, make the same great tasting ceviche in the form of a shrimp ceviche lasagna to serve our 6 kids. As much as I liked the special way my mom served her ceviche, I think serving 6 kids that same way is too time consuming and, not to mention, not enough for all of them. Our version has the same great sabor that I had growing up, only now it’s much quicker to make and has a larger serving.

I buy all the same fresh lent ingredients my mom did, such as fish, shrimp, veggies and Clamato The Original at Walmart, and I layer them like I would a lasagna. The pan is lined with tostones, rice and shrimp ceviche, which is followed by a final layer of diced avocados, jalapeños (for a nice kick), and queso fresco. This dish is amazing on so many different levels! It’s perfect when you want to serve a special dish like shrimp ceviche for a larger crowd and it looks so pretty all layered up and topped with all that yumminess! Ingredients:

2 12 oz bags of peeled and deveined shrimp.

3 small tomatoes

1 small red onion

Lime

3 cups of long grain rice

3 green plantains

Salt & pepper

red cabbage

Queso fresco

1 jalapeño

1 avocado

1 cup of cilantro

1 cup Clamato The Original

Instructions:

Start off by making your rice according to the instructions on the package. **We add a few teaspoons of chicken broth to our rice.

In a large bowl, mix your shrimp, onions, tomatoes,salt & pepper and cilantro. Add lime juice from one lime and 1 cup of Clamato and mix.

Slice and fry your plátanos until they’re golden brown.

Line lasagna pan with tostones, follow with rice, then ceviche and top with Clamato.

Top with another layer of tostones and repeat once more. You can at this point add the queso fresco and bake until cheese is melted but it taste just as good cold!

Top your shrimp ceviche lasagna with diced avocados, jalapeños, queso fresco, red cabbage and 1/2 cup of Clamato.

Serve with diced avocado, a salad and slices of lime! Super easy to make and will definitely impress anyone who has a plate (or two).

Growing up in Brooklyn meant I had access to yummy latin food on almost every corner! The options were endless and available at almost any time of the day or night. To this day, it’s still one of the biggest things I miss about living in Brooklyn. Now at home, Franklyn and I do cook primarily traditional latino recipes with a mix of our heritages, with his being Dominican and mine being Puerto Rican. For the most part it’s rice, beans and some type of meat and salad, but for special occasions we do try to mix things up a little. One of my husbands favorite is a Chimi (a dominican Burger). It’s definitely an indulgence and not something we make often. However, ever since I discovered MorningStar Farms® Grillers® Original Burgers that I buy at Walmart, it’s given us a good excuse to make a vegan chimi dominican burger more often, which is obviously a healthier option.

The secret to these Chimi’s is all in the sauce, which consists of ketchup, mayonnaise and a dash of worcestershire sauce. There’s lots and lots of different ways and ingredients that you can make the chimi sauce with but we keep ours simple. You have to taste it to truly appreciate how delicious it is topped on a chimi! I’ve since then traded my nights out dancing for popping milk bottles at home with Olivia and Joseph, but I’ve still managed to sneak in those yummy Chimi’s, only a healthier version! Ingredients:

MorningStar Farms® Grillers® Original Burgers I bought them at Walmart
Fresh bread rolls
Cabbage
Tomatoes
1/2 cup of ketchup
1/2 cup of mayonnaise
1 red onion
Salt & pepper
1 1/2 tablespoons of vegan worcestershire sauce

Instructions:

Sauce: Combine ketchup, mayonnaise, worcestershire sauce and mix.

Toast your buns. **We toast them in a frying pan with spray butter.

Throw your MorningStar Grillers in the microwave for 1 minute. **We add a touch of salt and pepper to them but they taste just as good without it.


Add your griller on top of bun, add cabbage, onions and tomato.

Top with chimi sauce and enjoy!

All totaled, my vegan chimi Dominican burger takes less than five minutes to make and is perfect during Lent season. It’s great for when you want a easy to make vegan cuisine but are tight on time and it would even make a great lunch for guest!

Growing up, I had rice and beans pretty frequently. Now, as a mom, not much has changed! We eat rice on almost a daily basis, and I’m not exaggerating one bit! Most of the time we serve it just plain rice and beans, like I had it when I was growing up, and everyone loves it! Joseph asks for it every night for dinner, but recently my older boys are starting to ask for a little more food diversity, so I’ve been trying to come up with ways to switch things up a little. Last time we made shrimp fried rice and it was a hit! This time I decided to make red pepper and lemon rice and I have a feeling it’s going to become a favorite at dinner time!


This red pepper and lemon rice is packed with flavor and is perfect to serve on its own, with a salad or grilled chicken. We kept it simple this time, but I’m pretty sure we’ll be serving it many different ways. The secret to making this rice was the DairyPure Milk that I added while the rice was boiling. Ingredients:

5 lemons
Red peppers
5 tablespoons of lemon juice which equal to 1 1/2 freshly squeezed lemons
Dill
Salt and pepper
3 tablespoons butter

3 tablespoons of garlic powder
2 cups of rice
1 teaspoon of turmeric
1/2 cup of chicken broth
2 cups of milk

 

Instructions:

Melt butter and stir in olive oil.

Stir in garlic powder, red peppers, lemon juice and continue to stir.

Add rice, salt, pepper, turmeric and cook for about 2 minutes. **Continue to stir while cooking.

Stir in chicken broth, lemon juice and milk.

Bring to a boil, cover pot and reduce heat and simmer.

Top with slices of lemon and dill (skip the dill and add parmesan cheese it taste just as amazing) and serve with a tall glass of milk, and you’re good to go!
