What Is Chicken Cordon Bleu
Also called a schnitzel, cordon bleu is a type of meat wrapped around cheese and then either deep-fried or pan-fried. The most popular type of cordon bleu is chicken which is wrapped around ham and Swiss cheese.
My family enjoys chicken cordon bleu so much that I’ve made different variations of this recipe. I always make classic keto chicken cordon bleu.
For parties, I’ll make chicken cordon bleu bites. And on busy days, I’ll fix keto chicken cordon bleu casserole.
Chicken Cordon Bleu Quesadilla
For this recipe, I took the classic combination of chicken, Swiss cheese, and ham, added them to a keto tortilla, and fried it in a skillet.
That’s the oversimplified description. There are quite a few more ingredients than that but you just can’t beat the flavors that are created as the cheese melts with ham and chicken.
I made them in a skillet, but you can make quesadillas in the air fryer, too! Place the quesadilla in the air fryer basket.
Heat at 375F for 5 minutes, flip them over, and heat for another 5 minutes.
Keto Quesadilla
Be creative and play around with the spices in this quesadilla. I used a lot of the same spices from cordon bleu, but you can make this a lot spicier just by adding some red pepper flakes and spicy brown mustard instead of Dijon.
For fun, serve the quesadillas with some keto queso. You can dip them into the queso or drizzle the queso on top.
What To Eat With Chicken Cordon Bleu
This is a kid-friendly meal, so add some kid-friendly sides to it. I like to make cauliflower mash with it or some keto garlic knots to the side and enjoy them with the cordon bleu quesadillas.
For something you don’t have to cook, mix together keto cucumber cauliflower salad. It’s tangy and has flavors that taste delicious with the cordon bleu quesadillas.
Quesadilla Meal Prep
You can save the quesadillas and eat them throughout the week, too. Eat them as soon as possible, for the best taste and texture. Store them in an airtight container in the refrigerator for up to three days.
If you reheat them in the microwave, the tortillas will become softer. I recommend heating them in the air fryer or stove, if you can.

Ingredients:
Olive oil
Shredded chicken
Minced garlic
Italian seasoning
Dijon mustard
Shredded swiss cheese
Shredded mozzarella cheese
Deli ham
Butter
Small street taco sized zero carb tortillas
Instructions:
1. Heat the olive oil in a skillet over medium heat.
2. Add the chicken, garlic and Italian seasoning to the skillet, and saute for 1 minute.
3. In a separate skillet, melt the butter over medium heat.
4. Spread mustard on one side of a tortilla, and place it into the skillet, mustard side facing up.
5. Layer ¼ cup of the mozzarella cheese on top of the tortilla and top with ½ of the chicken mixture to the top.
6. Place 3 slices of ham on the tortilla. Sprinkle with ¼ cup of the swiss cheese, and place a second tortilla on top.
7. Saute until browned and crispy on the bottom.
8. Carefully flip the quesadilla, and cook until browned and crispy on the other side.
9. Remove the quesadilla, and repeat steps 4-10 to make the second quesadilla.

- 2 tsp Minced Garlic
- 1 tsp Italian Seasoning
- 1 tbsp Dijon Mustard
- 1/2 cup Shredded Swiss Cheese
- 1/2 cup Shredded Mozzarella Cheese
- 6 slices Deli Ham small slices
- 2 tbsp Butter
- 4 small Street Taco Sized Zero Carb tortillas
