During the summer we always try to incorporate more veggies and fruit into each meal. It keeps meals healthy and they’re quicker to make. This week we decided to make scallops, spinach and strawberries with balsamic syrup. It’s the perfect summer appetizer for guest or even as a light dinner if you add a side salad. Scallops Spinach & Strawberries With Balsamic Syrup
Ingredients:
Scallops
Salt and pepper
Olive oil
2 cups of balsamic vinegar
4 tablespoons of Sugar
Strawberries
Spinach
Directions:
Cut strawberries in half.
Salt pepper scallops to your liking.
Heat olive oil in pan and cook scallops for 2 minutes and flip. You’ll know scallops are done when they’re golden brown on both sides and are firm to the touch.
In a large skillet heat olive oil and add spinach until soft and place on top of scallops.
Top with strawberry and balsamic syrup (click for here instructions on how to make balsamic syrup).
