When it comes to vegetables, Brussel sprouts are not high in very many people’s lists. I get it – they taste like tiny cabbages. They are so healthy and good for you that it’s important to find delicious ways to eat them.
In 1/2 cup of Brussel sprouts, there are 4g net carbs and 137% of the recommended daily intake of vitamin K – the nutrient that helps with blood clotting and bone health. It’s also really high in vitamin C which promotes immune health and iron absorption.
So, do your body a favor and try this recipe. The savory and creamy sauce is so delicious you won’t even be able to tell that you are eating little bites of Brussel sprouts!
Best Keto Brussel Sprouts Casserole
If you are going to make just one recipe with Brussel sprouts, make this one! This casserole has more than just the small round veggies. Sliced mushrooms and onions are covered in a creamy garlic butter sauce.
Then, you add some salty bacon and top it all with crunchy pork rind crumbs and grated parmesan cheese. This casserole tastes so rich and has lots of interesting textures that keep you from feeling bored.
Since this is made with a cream-based sauce, I suggest eating leftovers within 3 days. Store it in an airtight container in the refrigerator. Heat it back up and the sauce and cheese should all melt again.

Whenever you follow any of my recipes, I hope you find new ways to change each recipe and make it how you like it. I always leave room for customizing them. For example, with this recipe,
I suggest slicing the Brussel sprouts in half. I noticed that doing that made them cook faster and made the texture more enjoyable. You really don’t have to slice them, you can just add them whole.
You can also make it spicier too. Since this is a creamy recipe, I suggest using red pepper flakes to add some heat.
The best spices for brussels sprouts are going to be earthy-sweet ones. I used ground thyme, salt, and pepper. For a lot more flavor, throw in some sage, parsley, basil, oregano, or rosemary.

Yes, Brussel sprouts are keto-friendly vegetables. The reason I used them in a casserole is that the fiber from the other veggies brings down the overall net carbs. You see, 1/2 cup of Brussel sprouts have about 4g net carbs.
You can bring that number lower by eating fewer of them and adding lots of low-carb veggies to the recipe.
Brussel Sprouts Casserole With Bacon

Ingredients:
Brussels sprouts
Mushrooms
Shallot
Olive oil
Butter
Garlic
Bacon
Chicken broth
Heavy whipping cream
Ground thyme
Salt and pepper
Pork rind
Grated parmesan cheese
Instructions:
1. Preheat the oven to 350 degrees.
2. Add the olive oil to a skillet over medium heat.3. Saute the brussels sprouts for about 5 minutes.
4. Add in the mushrooms and shallot, and saute another 4-5 minutes until softening. Remove from the skillet and set aside.
5. To the same skillet over medium heat, add the butter.
6. Mix in the bacon pieces and minced garlic, and saute for 30 seconds.
7. Stir in the broth and then the heavy whipping cream and ground thyme.
8. Mix in salt and pepper to taste.
9. Simmer the sauce until it thickens.
10. Pour the vegetables back into the sauce, and stir to combine.
11. In a bowl, mix together the pork rind crumbs and parmesan cheese.
12. Add the mixture to a greased baking dish.
13. Sprinkle the crumb mixture over the casserole.
14. Bake for 25 minutes.
15. Let sit for 10 minutes before serving, garnished with additional chopped bacon if desired.

- 8 ounces Mushrooms sliced
- 1 Shallot sliced thin
- 2 tbsp Olive Oil
- 2 tbsp Butter
- 2 tsp Garlic minced
- 1/2 cup Bacon chopped
- 1/2 cup Chicken Broth
- 1 cup Heavy Whipping Cream
- 1/2 tsp Ground Thyme
- 1/4 cup Pork Rind Crumbs crushed
- 1/4 cup Parmesan Cheese grated
