It is probably a good idea to limit how many beets you eat at a time if you are on a low-carb diet. One cup of cooked beets has 12g net carbs. This doesn’t leave a lot of room for other foods with carbs in them.
My recipe feeds 6 people, so the amount of carbs from the beets is pretty low. In fact, there are only 3g net carbs per serving of this salad.
What To Make With Beets
There are so many things you can make with beets. I love this recipe because it adds color and tastes completely different from other keto-friendly recipes.
Whenever you make a recipe with beets on a keto diet, always fill it with other low-carb ingredients and use fewer beets. That way, the beets won’t increase how many carbs are in your recipe.
You can use beets to make a dip, or as a natural flavor for salad dressing. I also like to crumble a few pieces of roasted beets and add them on top of my salad. Add some goat cheese on top and you have a colorful and delicious lunch!

Have you heard of pink potato salad? My husband recently introduced me to his childhood favorite recipe. It’s basically beets and potatoes. So I took this recipe and turned it into a low-carb version.
I’m sure you could use turnips or cauliflower instead of eggs too. That might mimic the texture of potatoes a little better but I love egg salads and this came out so delicious!

This makes a really fast and healthy lunch. Quickly grill a bunless burger and lunch is served!
Another idea – add this salad on top of some large-leaf lettuce. That will make lettuce wraps and have a satisfying crunch to them too.
If you prefer sandwiches, just make some 90-second keto bread. Then, you can have a beet and egg salad sandwich that is totally low in carbs.
How To Store Egg Salad
This is perfect for your meal prep. Store this egg salad in your meal prep containers and keep it refrigerated. It will stay fresh for up to 3 days.
The reason I wouldn’t keep it past 3 days is that the texture eventually changes and it just doesn’t taste as good.
Side Dish With Beets
Since beets naturally have carbs and sugar in them, it is a good idea to use them as a supporting ingredient in side dishes, not as the main ingredients.
That’s why this side dish is so perfect. The eggs and dressing are the main ingredients, and they are all naturally low in carbs.
Easy Summer Recipes
The colors on this salad really pop! This is a fresh summer recipe, especially if you use fresh beets. Serve it on the side with a grilled steak and roasted cauliflower.

- Hard boiled eggs
- Fresh Dill
