Cranberries are so festive! I love to use them in my keto recipes during the holidays. They have the same bold red colors that match holly berries and deep green mistletoe.

Even more magical than the way this meal looks is how quickly it comes together. It only takes about 30 minutes to cook, so dinner will be ready in less than 45 minutes. This gives you plenty of time to focus on the side dishes and talking to your family! 

Keto Cranberry Chicken Thighs 

Red cranberries and flavorful green rosemary combine to make a festive and low-carb dinner for your family. There are only 4g net carbs in each serving, leaving you enough carbs in your macros to enjoy your favorite side dishes with it.

In this recipe, I used chicken breasts. If you cut them thinner, they will cook faster. You can just as easily use boneless skinless chicken thighs. They will taste just as delicious as chicken breasts with cranberries and rosemary.

For a perfect holiday meal, serve it with keto cornbread dressing and some garlic butter cauliflower rice. You can also add some low-carb dinner rolls to the table. Now you have a filling and yummy holiday meal that is made completely with low-carb recipes.

This keto rosemary chicken breast is the perfect thing to use in your weekly meal prep. Just store the leftover chicken in an airtight food storage container. It will stay fresh for up to 3 days.

The secret to this tasty recipe is the fresh ingredients. When you cook with fresh herbs, you will notice how it releases aromas and flavors into the chicken. Fresh-minced garlic is more flavorful than garlic powder, so chop up some heads of garlic if you can.

Always use fresh cranberries when you cook. They have more fiber, which decreases how many net carbs it has. Plus, as it cooks, the fresh cranberries will caramelize in the most beautiful way. The flavor from fresh cranberries cooked on the skillet is unmatched. 

My last tip is that if you use salted butter, you might not have to add more salt to the skillet. Only add extra salt if you use unsalted butter.

Ingredients:

Boneless skinless chicken breasts
Butter
Paprika
Salt and pepper
Garlic
Chicken broth
Heavy whipping cream
Fresh rosemary
Fresh cranberries

Instructions:

Melt the butter in a large skillet over medium high heat.

Season the chicken with the paprika and salt and pepper to taste.
Sear the chicken on both sides, cooking about 2 minutes on each side.
Remove the chicken.

Cover and simmer for 15-20 minutes.

Ingredients
  

  • 2 Boneless Skinless Chicken Breasts cut in half lengthwise
  • 4 tbsp Butter
  • 1/2 tsp Paprika
  • 2 tsp Garlic minced
  • 1 cup Chicken Broth
  • 1/2 cup Heavy Whipping Cream
  • 2 tbsp Rosemary fresh chopped
  • 1 cup Fresh Cranberries

Instructions
 

  • Melt the butter in a large skillet over medium high heat.
