This easy keto grilled cheese is crispy and gooey, just like you remember it tasting like when you were a kid!
One of my favorite things is to find ways to turn classic lunch, snack, or dessert recipes and turn them into keto-friendly recipes. You shouldn’t have to give up the foods you love just because you want to live a healthier life!
Grilled cheese is one of those recipes that I loved as a kid. The toasted bread with the hot, melted cheese in the middle. This recipe has all the same flavors and textures – just none of the carbs. You are going to love it!
Best Keto Grilled Cheese
The only thing about traditional grilled cheese that isn’t keto-friendly is the bread. So, when I set out to create a keto grilled cheese recipe, I knew I had to make a low-carb bread that grills well without falling apart.
I am thrilled to say that I did it! This keto grilled cheese recipe takes no time at all and it crisps up perfectly when you grill it on the pan. You can use any type of cheese that you want. Go crazy and add some hot pepper cheese or some extra sharp cheddar.
2-Minute Keto Bread
Before you start groaning and thinking you have to bake an entire loaf of bread, stop. I’m about to share the secret to making keto bread in the microwave. It only takes 2 minutes per slice. That’s it! This is going to become your favorite way to make low-carb bread.
The entire recipe for the 2-minute keto bread is in the printable recipe card at the bottom of this post. You just mix all the ingredients together in a small square ramekin and then microwave it for about 2 minutes. That’s it. Let it cool down and you have a slice of bread that you can use for the grilled cheese.
Here’s what I used in my keto bread:
- Almond Flour – Use blanched almond flour, not almond meal. Almond meal will make it taste grainy.
- Coconut Flour
- Eggs
- Baking Powder
- Butter – If you use salted butter, use a tad less salt.
- Almond Milk – For keto, use unsweetened almond milk. You can use vanilla almond milk for a deeper flavor.
- Salt
- Italian Seasoning
Low-Carb Sandwich Ideas
You can use this 2-minute bread recipe and make lots of different sandwiches from it. Don’t stop with grilled cheese. Here are a few of my favorite low-carb sandwich ideas that all taste scrumptious with my almond flour bread.

Quick Keto Lunch
From the bread to the grill, this entire thing takes less than 10 minutes to make from start to finish. This is one of my favorite low-carb lunch ideas because it takes almost no time at all.

Kid-Friendly Low-Carb Lunch
If you have kids, then plan on making some of these for them too. This grilled cheese is so delicious that kids love it too! You can make their bread in the microwave while your sandwich grills on the stove.
Serve it with some fresh vegetables or a chopped salad for a filling and healthy lunch.
This is perfect for lunch, as an after school snack, or even works as a light dinner on those really busy days.
How To Customize It
There are lots of ways to customize this sandwich without adding any cooking time. Make it even more hearty and filling by adding a slice of ham or bacon to it.
Pepper jack cheese has the perfect amount of heat! Some people also like to add some avocado slices for a healthy fat boost!
Easy Keto Grilled Cheese Recipe

Bread Ingredients:
Almond flour
Coconut flour
Eggs
Baking powder
Butter
Almond milk
Salt
Italian seasoning
To make the sandwich add your favorite cheese
Instructions:
To make the sandwich bread, find a small square dish. I had a rectangle pyrex I used or you can also use square ramekins.
Spray your dish with oil or butter to keep the bread from sticking.
Add all ingredients (except cheese) to the bowl and whisk together. Add the batter to your dish.
Microwave for 2 minutes. Your bread slices are now ready for the grilled cheese. It’s super easy!
To make the grilled cheese:
Butter each slice of bread. Using a skillet over medium heat, add one bread slice, butter side down on the skillet adding sliced cheese to middle and topping with the remaining bread slice butter side up.
Toast over medium heat until cheese has melted, flipping your sandwich halfway through. Toast for about 3 minutes or until bread is golden and cheese is melted.

Easy Keto Grilled Cheese
This is the best keto grilled cheese! It uses 2-minute keto bread and tastes like a classic sandwich.
Ingredients
- 2 tbsp almond flour
- 2 tbsp coconut flour
- 2 eggs
- 1 tsp baking powder
- 2 tbsp butter
- 2 tbsp almond milk
- 1 tsp Italian Seasoning
- 1 slice cheese
Instructions

Spray a square or rectangular microwave-safe dish with oil or butter.

Add all of the ingredients except the cheese to a medium-sized bowl and mix together. Pour the batter in the square dish.

Microwave the batter for 2 minutes.

Use this bread for the girlled cheese.
