Easy Baked Rueben Casserole
While you most certainly can replicate an almost exact version of a Reuben sandwich, keeping this keto Reuben casserole simple makes it super easy to customize to your liking! I used layers of corned beef, sauerkraut, pickles, and Swiss cheese.
For a creamier casserole, use softened cream cheese in place of whipping cream, you can also choose to add caraway seeds that will give the casserole a rye bread-like flavor or if you’re not on a low carb diet you could instead add a bottom layer of rye bread! Lots of delicious options!

Below are the ingredients you’ll need to make this keto casserole. Exact measurements can found in the printable recipe card below.
Ingredients:
Corned Beef
Sauerkraut
Swiss cheese
Dill pickles
Butter or cooking spray
Sauce:

Instructions:
Preheat oven to 400 degrees
Drain liquid from sauerkraut. I used a mesh strainer but you can also use a cheesecloth and in a pinch paper towels will work too.
Grease your casserole dish (similar to the one I use) with a nonstick cooking spray (I use this one) or butter.
Layer half of the corned beef and top with sauerkraut, and pickles.
Top with 1/2 the sauce mixture and top with 1/3 of the cheese. Repeat layers (meat, sauerkraut, sauce, pickles, and cheese) with remaining ingredients.
Cover with aluminum foil and Bake casserole for10-15 or until cheese is bubbling.
Broil for 2-3 minutes and serve!
Serve this low carb Reuben casserole with extra pickles and drizzle with Russian dressing or even a low carb hot sauce!
