How To Make Mermaid Cookie Dip

Olivia is at that cute age where she wants to do everything I’m doing. I was a boy mom for so long, that I find it incredibly fun that I finally have someone interested in anything I do! So far she’s showing the most interest in cooking, and of course, taking pictures afterward. Which is ironic because if you’ve followed me long enough you know that fashion was my first true love!

Ingredients:

8 oz. cream cheese, softened (i.e. one whole brick)
4 cups confectioners’ sugar
2 tbsp milk
2 tsp vanilla extract
Pink gel food coloring
Purple gel food coloring
¼ cup multicolored sprinkles + extra for garnishing (we used a mix with tons of pink, purple, blue, etc.)
Aqua jelly beans
Purple jelly beans
Wafers, cookies, biscuits or even fruit for dipping

Directions:

Yields: Approx. 2 cups worth of dip

Using a stand mixer, start beating cream cheese, 2 cups confectioners’ sugar and milk on low speed.

Gradually increase the speed to high.

Once the batter is smooth, stop the mixer to add another cup of sugar. Beat until smooth and then add the final cup of confectioners’ sugar. Beat again and add vanilla extract.

Once the mixture is smooth, divide into two bowls.

Color one bowl with pink gel food coloring and the other with purple gel food coloring.

Add purple batter into the pink and fold, ensuring you don’t mix both colors. Instead, aim to blend them to create a marbled look.

Fold in ¼ cup sprinkles.

Serve in individual bowls and garnish with jelly beans and more sprinkles.
