Keto Breadsticks Cauliflower
You might have heard of different keto breadsticks recipes, but this is the first one I have made with cauliflower. I love this recipe! It has so much fiber in it that there are only 2 grams net carbs in each breadstick.
Plus, it’s a fantastic way to encourage your kids to eat more veggies, without them knowing they are eating vegetables. These keto breadsticks are so tasty that you can’t even tell they are made with cauliflower.
Keto Cauliflower Breadsticks
You will need a food processor to effectively rice the cauliflower florets so that they blend in with the rest of the breadstick dough. If you don’t have a food processor, then use pre-made cauliflower rice.
To use frozen cauliflower rice, cook it completely and then drain it. After you drain it, put the cauliflower rice in a cheese cloth and squeeze it tightly, removing as much moisture and water as possible.
The drier the cauliflower rice is, the better it will dissolve and mix into the dough.

Keto Cheesy Cauliflower Breadsticks
There are two different types of cheese in these breadsticks, but you can add more cheese and change up the flavors or varieties. For the dough, you have to use mozzarella cheese. It melts the best and is the base of the breadstick dough.
You can change the cheese on top of the breadsticks to be whatever you want. To give it a nuttier aftertaste, use Parmigiano regionno cheese. For a bit of heat, sprinkle some pepper jack cheese on top.
To make it tangier, shred some swiss cheese and sprinkle that on top. Or, go for a classic breadstick flavor and just use parmesan cheese.
Cheesy Cauliflower Breadsticks
If you want to make extra breadsticks, they are really simple to freeze and keep for later. Wrap each breadstick in wax paper and store them together in a Ziploc freezer bag. Remove as much air from the bag as possible before placing it in the freezer.
The breadsticks will stay fresh in the freezer for up to six months. You can also store them in the refrigerator in a food storage bag for up to a week.

Servings: 18 breadsticks

Ingredients:
Large head of cauliflower
Large eggs
Mozzarella cheese shredded
Parmesan cheese grated
Almond flour
Garlic powder
Italian seasoning
Salt and pepper
Instructions:
Preheat the oven to 425 degrees. Cut the cauliflower into florets, and place into a food processor. Pulse until the cauliflower has been finely riced.
Cook the cauliflower rice until crisp tender, and then drain completely to dry out as much as possible.
Add the cooked cauliflower rice to a large mixing bowl with the eggs, 1 cup of the mozzarella cheese, half the parmesan cheese, the almond flour and salt and pepper to taste. Stir to combine well.
Spread the mixture out into a rectangular shape on a parchment lined baking sheet.
Sprinkle it with garlic powder and Italian seasoning.
Add the remaining mozzarella cheese and parmesan cheese on top.
Bake for 15 minutes, or until the cheese has melted and the breadsticks have browned a bit.
Slice into 16 pieces and serve.
