Paula Deen’s Amazing Chicken Casserole
It seems like everyone is talking about Paula Deen’s amazing chicken casserole. It’s all over Pinterest and Facebook. She didn’t call it amazing, but everyone else on the Internet sure did.
After checking out her original chicken and noodle recipe, I knew there was a way to make this low-carb and ket0-friendly.
Her casserole has all the makings of a classic midwest casserole – noodles, cream of celery soup, flour, chicken, and lots of cheese and dairy. All I had to do was use low-carb ingredients in place of the flour and noodles – it’s so easy (and so delicious!).
Keto Chicken Casserole
This cheesy and amazing chicken casserole takes just 20 minutes to bake in the oven. It tastes the best when it is hot and fresh out of the oven, but you can make it ahead of time and keep it in your refrigerator for up to three days.
Instead of penne pasta or even egg noodles, I used Palmini linguini noodles. They are made from hearts of palm, so they are incredibly high in fiber, which lowers their overall net carbs. Plus, they are already pre-cooked, which cuts down on my cooking time!
You don’t need to use a canned cream of anything soup for this recipe either. I used a combination of heavy whipping cream and sour cream and the result was perfect!
Creamy Chicken Casserole
Save yourself time and just pick up a rotisserie chicken from the store. It is already cooked and seasoned, all you have to do is shred it and add the chicken to the casserole.
For the cheese, I just used shredded Monterey Jack cheese. I love the color and flavors of it. Mozzarella melts beautifully but it doesn’t have a strong flavor so I would just sprinkle some in with the Monterey Jack cheese. Sharp white cheddar cheese would also taste incredible in this casserole.
Easy Chicken Casserole
I used Palmini noodles. They are seriously my favorite low-carb pasta that you can buy. I used them before to make keto pasta alfredo and it was divine! You can use other types of low-carb noodles instead of Palmini.
Try it with some zucchini noodles or some spaghetti squash. I’ve also heard of people making their own pasta noodles, but I prefer to buy mine.
What To Eat With Chicken Casserole
As delicious as this casserole is, it still needs a side dish or two in order to make it a complete meal. This will taste amazing with some keto garlic knots on the side. My kids love them!
Add a copycat Olive Garden salad to the table with some keto green beans and bacon and your dinner is ready! It doesn’t take much to make this a really filling meal for everyone.

Ingredients:
Palmini linguini noodles drained and rinsed
Shredded chicken
Onion
Butter unsalted
Minced garlic
Heavy whipping cream
Sour cream
Monterey jack cheese shredded
Red pepper flakes
Salt and pepper
Instructions:
Preheat the oven to 350 degrees, and grease a 9×9 baking dish well.
Melt the butter over medium heat. Place the onions in the skillet, and saute until softened.
Mix in the garlic, and saute for 30 seconds longer.
Pour in the heavy whipping cream and sour cream, and stir until smooth and thickened.
Add salt and pepper and red pepper flakes to taste.
Stir in ½ of the cheese, the chicken and palmini noodles.
Spread the mixture into the baking dish, and top with the remaining cheese.
Bake for 20 minutes, or until the cheese is melted.
