Have you ever roasted garlic before? If not, let this be your sign that you should try it. When you roast the garlic, you will unlock some of the most amazing and deepest flavors from the garlic. It really enhances the sauce in a huge way!
Roasting garlic is pretty simple. Just slice the top off the head of garlic and rub the entire thing with olive oil. Then, wrap it in aluminum foil and bake it. When it’s done, the garlic will easily slide out of the husk and it’s really tender and easy to mash.
This is the secret to my incredible alfredo sauce. It changes the entire recipe.
Best Keto Noodles
For this recipe, I used my favorite type of low-carb noodles – Palmini noodles. They are made from hearts of palm and are incredibly high in fiber. They have so much fiber in them that it makes the net carbs really low.
Feel free to use your favorite type of keto-friendly pasta in this recipe. Try it with zoodles, spaghetti squash, or even Wonder noodles.
Easy Low-Carb Alfredo Sauce
This alfredo sauce is so easy to make that I suggest enjoying it fresh instead of trying to keep leftovers. If you want to store leftovers, the alfredo sauce will be fresh for up to 3 days if you keep it in an airtight container in the refrigerator.
It will solidify a bit, so reheat it on the stove and add more heavy whipping cream if it is still too thick.
Alfredo Dinner Ideas
This is a very simple recipe that you can build upon. I just made a delicious alfredo sauce and poured it on top of my favorite Palmini noodles. Add some spinach or kale to make it even more nutritious.
For protein, throw in some unglazed ham, shredded rotisserie chicken, or cooked shrimp. This alfredo dinner will also taste delicious with some mushrooms and broccoli mixed in as well. Then, all you need is some keto garlic knots and your favorite copycat Olive Garden salad – and you have an Italian feast that will feed an entire family!

Instructions:
1. Preheat the oven to 400 degrees.
2. Slice the top off of the garlic head, but do not peel it.
3. Rub the olive oil over the garlic and wrap the garlic in aluminum foil.
4. Bake for 45 minutes.
5. Unwrap the head of garlic and squeeze the roasted garlic out of the husk. Mash it well with a fork in a bowl.
6. Melt the butter in a skillet over medium heat on the stove and add in the roasted garlic.
7. Whisk in the chicken broth and heavy whipping cream.
8. Add salt and pepper to taste as well as a pinch of nutmeg. Simmer the sauce until it has thickened.
9. Stir in the parmesan and parsley until the cheese has melted.
10. Serve with palmini noodles or your favorite keto-friendly recipe.
