Mexican Pulled Pork
The best way to make super-tender and flavor-infused meat is in the Instant Pot. As the steam pressure cooks the meat, all those spices cook deep into the meat and it comes out with flavor in every single morsel.
You can use this Mexican pulled pork recipe to make pork for tacos, salad, or even keto nachos! I like to eat it just by itself, with a side salad too sometimes.
In the recipe, I left the seasoning open to your choice. I prefer chipotle garlic dry rub because it is smoky and not very spicy. Any type of sugar-free pork rub will be perfect for this recipe.
Enchilada Sauce Keto
I used enchilada sauce in this delicious taco casserole. Enchilada sauce is mildly keto-friendly. The most popular kind – Old El Paso – has 4 grams of carbs in 1/4 a cup. If you buy authentic Las Palmas enchilada sauce, it only has 2 grams net carbs in 1/4 a cup and doesn’t have sugar or corn starch in it.
Always look at the ingredients list and nutrition facts before you buy enchilada sauce.
Keto Pulled Pork Casserole Mexican
There are two parts to this recipe – the pulled pork and the casserole. You can make the pulled pork ahead of time and then store it in the refrigerator. Then, all you have to do is assemble the casserole and bake it!
This is also an easy recipe to make in the slow cooker. Place all the ingredients (except the shredded cheese) in the slow cooker. Cook it on high for 4-6 hours or on low for 6-8 hours.
Serve it with your favorite toppings! Add some sour cream, shredded lettuce, and guacamole for a little extra flavor.

Keto Mexican Pulled Pork Taco Casserole Recipe

Ingredients:
For the pork:
Pork tenderloin
Olive oil
Dry rub seasoning of choice (we used chipotle garlic)
Chicken broth
Salt and pepper
Casserole:
Pulled pork prepared
Olive oil
Onion
Minced garlic
Shredded cabbage
Fresh lime juice
Enchilada sauce
Chili powder
Cumin
Paprika
Oregano
Monterey jack cheese shredded
Salt and pepper
Lime wedges and chopped parsley for garnish
Instructions:
Pulled Pork:
Set an Instant Pot to saute, and add the olive oil to the bottom of the pot.
Season the pork well with salt and pepper to taste, as well as a dry rub of your choosing.
Place the pork pieces into the Instant Pot, and sear evenly on all sides.
Add the chicken broth to the Instant Pot.
Place the lid on the Instant Pot, and set it to sealing. Cook on high on manual setting for 45 minutes, allow to natural release for 10 minutes, and then carefully turn the knob to venting in order to release any remaining pressure.
Remove the pork and shred well with two forks.
Casserole:
Preheat the oven to 350 degrees.
Add the olive oil to a skillet over medium heat.
Stir in the onions, and saute until becoming tender.
Mix in the garlic, and saute 30 seconds more.
Place the cabbage into the skillet, and saute for 3-4 minutes.
Add in the pulled pork, seasonings and enchilada sauce. Stir to combine well.
Spread the mixture in the bottom of a well greased 9×9 baking dish.
Sprinkle with the cheese and bake for 20 minutes.
Garnish with lime wedges and chopped parsley before serving.
