Use sugar-free chocolate chips as the cute little eyes and nose! If you have kids, ask them to decorate the ghosts, they will have a really fun time.

If you don’t have any confectioner’s sugar substitute, I suggest getting some. It will give you the best texture! Granular sweetener will leave the whipped cream topping grainy.
Liquid sweetener doesn’t fluff up as well. Honestly, the confectioner’s sugar substitute is perfect for the crust, the filling, and the whipped topping.
Low-Carb Halloween Desserts
These little desserts are perfectly portioned into bite-sized pieces. You probably won’t have any leftovers to store. If you do, I suggest keeping them in the freezer. They will stay fresh in the freezer for 3 months.
Here is how to freeze them. First, place them on a baking sheet in a single layer.
Then, place this baking tray in the freezer until the cheesecake bites are completely frozen.
After they are completely frozen, you can wrap them up individually in plastic wrap and store them in a resealable freezer-safe food storage bag and keep it in the freezer.
If you want to store them in the refrigerator, just keep them in an airtight container. They will only last about 3 days before the quality begins to deteriorate and the almond crust softens.

Crust
Almond Flour
Swerve Confectioner’s Sugar Substitute
Butter
Cheesecake Filling
Cream Cheese
Swerve Confectioner’s Sugar Substitute
Vanilla Extract
Heavy Whipping Cream
Topping
Sugar-Free Whipped Cream
Sugar-Free Mini Chocolate Chips
Instructions:
Mix together the almond flour, 3 Tbsp. sugar substitute and 3 Tbsp butter in a bowl until a crumbly dough combines.
Press the dough into the bottom of a well greased mini muffin tin, filling each of 16 sections about ⅓ of the way full.
In a mixing bowl, beat together the cream cheese and ⅓ cup sugar substitute until creamy and smooth.
Mix in the vanilla and heavy whipping cream until light and fluffy.
Fill the sections of the muffin tin the rest of the way full with the cheesecake mixture.
Place the cheesecakes into the freezer to chill for an hour, or until the cheesecake mixture has hardened.
Remove the mini cheesecakes from the muffin tin, and top with whipped cream sprayed on top in the shape of a ghost.
Place two mini chocolate chips for eyes and one for the nose on the front of each cheesecake ghost bite before serving.
