Are Cranberries Keto
Since most types of food are high in natural sugar, you might wonder if cranberries are ok to eat on the keto diet. The good news is that they are keto-friendly! In fact I’ve also used cranberries in this low carb trail mix and this cranberry chicken salad.
Cranberries are made up of mostly water, fiber, and a little bit of sugar. In fact, there are 9.2g net carbs in 1 cup of chopped cranberries.
I used 2 cups of cranberries in this bread, so I suggest enjoying it in moderation. There are 5g net carbs in each slice. Depending on how many carbs you have left in your macros, you should be able to enjoy a slice or two.
Keto Orange Cranberry Bread
This is considered a quick bread because it doesn’t have any yeast and so you don’t have to spend all that extra time letting it rise. Even though it’s called quick bread, it still takes about an hour for it to fully bake.
Make it ahead of time and either freeze it or store it in the refrigerator so that it stays fresh before your party. Here’s how long it will last when you store it in different ways:
- Room Temperature: Wrap it up and keep the air off of it and it will last for up to 3 days.
- Refrigerator: Keep it in an airtight bag or container and it will last for about a week.
- Freezer: It will stay fresh for 6 months.
Keto Cranberry Orange Muffins
The wonderful thing about this bread is that you can make them into muffins too! Muffins bake a lot quicker than bread, and they are perfect to serve at parties.
To make delicious low-carb cranberry muffins, bake them in a muffin pan at 350F for about 25 minutes. You will know they are done baking when you insert a toothpick into the middle of the muffins and it comes out clean.
Top the muffins with the same low-carb glaze. They are delicious and the perfect Christmas breakfast or party food.
Gluten-Free Cranberry Orange Bread
This bread is beautiful, right out of the oven. Let it cool completely and then drizzle the glaze on top. This is jaw-droppingly beautiful bread!
When you serve it at a party, add some fresh rosemary sprigs to the serving dish as a garnish. It complements the bright red cranberries perfectly. You can even make this bread up to 6 months before your party or event. Just keep it stored safely in the freezer.
Here’s how to freeze and reheat this low-carb bread.
First, bake it and let it cool off completely. Then, wrap it tightly in aluminum foil. Store it in a freezer-safe food storage bag or container. When you are ready to reheat it, just let it sit out on the countertop for about an hour.
You can also place it in the oven at 350 for about 5 minutes, or until the middle is warmed up.
Low-Carb Cranberry Orange Bread
This keto-friendly glaze is one of my favorite things about this bread! Save this recipe so that you can find the glaze ingredients.
There are so many different ways to use it. I like to drizzle a little bit on top of my keto pancakes instead of syrup. It also tastes delicious on top of keto blueberry muffins.
