Chicken Alfredo Soup
What is your favorite thing about chicken alfredo? Is it the rich and cheesy sauce? Or maybe it is the long, slender pasta. I took all my favorite things about chicken and broccoli alfredo and put them into a low-carb soup.
This is the epitome of comfort food! I was inspired to make this after enjoying my keto creamy chicken noodle soup. I wanted to make it thicker, and richer, and add more noodles to it. The end result looks and tastes just like chicken alfredo, but it is still a brothy soup.
Honestly, this resembles a thick chowder or bisque. Call it whatever you want – it is delicious!
Keto Chicken Alfredo Soup
This recipe calls for shredded chicken. To save yourself cooking time, just grab a rotisserie chicken from the store and add the shredded chicken to the soup. If you do, the entire soup only takes about 20 minutes to make! That is faster than take out and tastes a million times as good.
You can also save yourself time by using frozen chopped onions instead of chopping your own. Chopping broccoli is really messy too, so I like to just grab a bag of chopped broccoli florets from the produce department. Frozen broccoli florets will work too!
Best Keto Noodles
My favorite keto noodles of all time come from Palmini. They are canned noodles and made from hearts of palm. This has so much fiber in it that the net carbs are extremely low. They really do taste and feel like traditional wheat pasta.
Before you add them to the soup, drain and rinse the noodles. This way they will soak up all the flavors from the soup even better.
Keto Chicken and Broccoli Alfredo
Another thing that makes this more of a soup than a traditional alfredo is that I didn’t use cream cheese. Traditional alfredo sauce is naturally keto-friendly. It includes cream cheese, heavy whipping cream, parmesan cheese, and butter.
In fact, if you really like creamy alfredo and noodles, then try this kicking Cajun shrimp and zoodles aflredo. It is creamy and packs a lot of heat along with it too! Or try something new and make low-carb chicken pumpkin alfredo.
The pumpkin adds a natural hint of sweetness and creaminess to the dish without adding very many carbs.
Chicken Soup Meal Prep
This keto chicken alfredo soup works really well in your meal prep too. It’s so rich that you can enjoy this soup by itself for lunch. It really will fill you up! Store it in an airtight food storage container and keep it in the refrigerator. It will stay fresh for up to three days.
When you are ready to reheat it, I suggest heating it on the stove. This way it will heat evenly and melt all the cheese together again.

Ingredients:
Palmini Angel hair pasta noodles
Broccoli
Chicken
Onion
Butter
Garlic
Italian seasoning
Chicken broth
Heavy whipping cream
Parmesan cheese
Salt and pepper
Fresh parsley Instructions:
1. Melt the butter in a pot over medium heat on the stove.
2. Add in the onions, and saute until softened.
3. Mix in the garlic, and saute another 30 seconds.
4. Pour in the chicken broth and heavy whipping cream. Stir to combine.
5. Add the broccoli to the pot, along with the Italian seasoning and salt and pepper to taste.
6. Bring the mixture to a low boil, reduce the heat, cover and simmer for 15 minutes, or until the broccoli is starting to become tender.
7. Mix in the shredded chicken, palmini noodles and parmesan cheese.
8. Continue to simmer an additional 5-10 minutes before serving garnished with parsley.

- 4 cups Chicken Broth

- 1 cup Parmesan Cheese grated
