Roasted Garlic Turnips
Do you like turnips? Just like potatoes, they are a root vegetable with a very distinct flavor. The texture resembles a potato, with a starchy bite.
Unlike potatoes, they are keto-friendly. People eat them either raw or cooked and they are so good for you, too! Turnips are high in vitamin C, iron, and calcium.
People love to replace potatoes with turnips because they are low-carb and high in fiber. One cup of raw turnips has 8.4 total carbs and 6 grams net carbs and 1.2 grams protein.
Turnips and Green Beans
One of my favorite ways to eat turnips is to roast them with garlic and serve them with roasted green beans. It’s a hearty side dish and goes with almost anything.
It only takes about 30 minutes to make and there are just 5 grams net carbs in each serving. Another fantastic thing about this is that green beans and turnips taste good with the same herbs and spices.
I used a combination of garlic, thyme, and rosemary on everything and it’s perfect. If you want bolder flavor, use fresh herbs as a garnish.
Green Beans and Bacon
Green beans and bacon just taste so perfect together. I like thick-cut because the pieces are bigger and the flavor stands out more.
You can also use turkey bacon for a lighter flavor, too. Can you use frozen green beans? You can, but I don’t recommend it.
If you’re going to use frozen green beans, steam them first and then remove as much moisture/water as you can. Any water that you leave behind will make the green beans and turnips less crispy.
What To Eat With Green Beans
This side dish goes with any main course or entree that you cook! The spices and flavors are so mild that they will taste delicious with some keto beef pho or even a bowl of spicy keto Cajun chicken and shrimp soup.
If you love Italian flavors, then make some keto sausage lasagna roll-ups. They are a fun finger food and are bursting with cheesy goodness.
How To Store Green Beans
Green beans, turnips, and bacon will stay fresh in the refrigerator for up to three days. Keep them in an airtight container and then reheat them in the microwave.
You can freeze them, too. Place them in a freezer-safe food storage bag or container and keep them in the freezer for up to six months.

Ingredients
- Green Beans
- Turnip
- Olive Oil
- Garlic
- Thyme
- Rosemary
- Bacon
Directions
Preheat the oven to 400 degrees. Place the turnips on a parchment lined baking sheet, drizzle with half of the olive oil and season with salt and pepper to taste.
Roast for 15 minutes. Remove the turnips and flip them over.
Add the green beans to the baking sheet, and drizzle with the remaining olive oil.
Mix the garlic, thyme, rosemary and more salt and pepper to taste into the mixture on the sheet pan, and toss to combine.
Roast for another 10-15 minutes, or until the vegetables are done to your liking.
Garnish with the crumbled bacon before serving.

- 1/2 pound Green Beans trimmed and broke in half
- 1 large Turnip peeled and chopped
- 2 tbsp Olive Oil divided
- 3 tsp Minced Garlic
- 1/2 tsp Thyme
- 1/2 tsp Rosemary
- 4 slices Bacon cooked and crumbled
Instructions
