What Is Pho
Beef pho is Vietnamese. Thinly sliced beef, rice noodles, and vegetables are covered in a savory beef broth.
Pho isn’t usually keto-friendly because it usually includes rice noodles. If you leave the rice noodles out – or use a keto-friendly noodle like I did – then this is a perfectly keto-friendly soup for any day of the week.
After making low-carb chicken pho, I knew I wanted to make a beef version! And it turned out so good.
Beef Pho
The most common types of Pho are usually either beef or chicken, but beef is the most common. Some recipes call for cooking the beef on the bones and letting it cook so long that the meat falls off the bone and the cartilage thickens the broth.
There are three beef cuts that most people use in pho – flank, brisket, and filet mignon. If you buy your steak from a butcher, you can ask them to slice the steak into thin strips for you.
If not, I suggest slicing the steak against the grain into pieces that are 1/4-inch thick.
Keto Pho
What sets pho apart from other types of soup? It’s the bold flavors from the fresh ingredients that makes it taste completely unique.
Instead of using dried herbs, use a whole cinnamon stick, star of anise, fresh ginger, and some whole cloves. Not only will this taste bold and powerful, but these spices are potently nutritious, too.
Cloves, cinnamon, and anise are all known to have anti-inflammatory properties, making them great for your blood pressure. Round out the flavors with some sugar-free honey.
It adds balances to the bold herbs and spices. I also added fresh cilantro. But if you don’t like how cilantro tastes, you can use fresh parsley instead.
What To Eat With Pho
Since this is a pretty filling soup, I suggest making a bowl of keto Vietnamese chicken salad on the side with it. The flavors in the pho will also taste pretty good with some keto crab rangoon casserole too.
If you want this soup to be a starter, then make keto honey garlic pork bites as the main course. And on the side, you can never go wrong with cauliflower rice or some keto Chinese noodles.
How To Store Pho
Save the toppings in separate containers because this soup will stay fresh without them for up to 5 days. It tastes even better the next day because the spices really soak into the thinly sliced beef.
Store this in an airtight food storage container and add it to your meal prep! Then, add fresh cilantro and green onions on top, and it will taste just as delicious as it was when it was fresh.

Ingredients
- Steak
- Beef Broth

Directions
Add the beef broth, water, onion, ginger, cinnamon, star anise, cloves, sugar free honey and fish sauce to a pot over medium heat.
Cover, and bring to a low boil. Reduce the heat to medium low, and simmer covered for 30 minutes.
Season with salt and pepper to taste.
Drain the broth through a sieve and pour the broth back into the pot. Add the steak to the pot, and cover to simmer until the steak is cooked through.
Mix in the miracle noodles, and serve garnished with bean sprouts, lemon wedges, cilantro and green onions.

- 3 cups Beef Broth
- 1 cup Water
- 1 package Miracle Noodles Rinsed and Drained Well

- 1 inch Knob Ginger sliced
