When you think of green bean casserole, there’s one image that probably comes to mind. Canned green beans in a casserole dish with cream of mushroom soup and crispy onions on top.
Well, I took that classic recipe and updated it! Instead of a high-sodium canned soup, I used heavy whipping cream, parmesan cheese, and real mushrooms to create the ultimate mushroom sauce.
And what about the crispy bits on top? I didn’t forget about them. Instead of fried onions (which is way too high in fat and carbs) I used crushed pork rind crumbs.
They are the perfect balance of crispy and salty without being too high in carbs.

I love bacon. It really improves any dish! Should you use thick cut bacon or regular? That is entirely up to you. S
Once you’re going to bake the bacon before you wrap up the green beans, you can use any kind that you want. Just remember that thick-cut will make more grease, which is more work to clean up.
You should also look at the packaging, too. Don’t use maple cured bacon or brown sugar bacon. Basically, if it has any kind of sugar or syrup in the name, don’t use it.
You can use turkey bacon if you want, but it won’t wrap around the green beans as easily.

You can make this recipe ahead of time, but I suggest storing the green bean bundles separately from the creamy sauce. The bacon wrapped green beans will stay fresh in an airtight food storage container for about three days.
Then, reheat them in the oven or an air fryer so that the bacon gets crisp again.

- Green Beans
- Butter
- Mushrooms
- Garlic
- Heavy Whipping Cream
- Parmesan Cheese

Directions
1. Preheat the oven to 400 degrees.
2. Line a baking sheet with tin foil, and lay the bacon pieces in a single layer on it.
3. Bake for 10 minutes, and then remove and let cool a bit.
4. Blanch the green beans until they are a crisp tender, and then drain and rinse immediately in cold water. Set aside.
5. Season the green beans with salt and pepper to taste, and roll 1⁄6 of them up into a piece of bacon.
6. Repeat step 5 with the remaining green beans to make 6 bundles total.
7. Layer the bundles on a foil lined baking sheet, and bake for another 10-15 minutes, or until the bacon and beans are done to your liking.
8. While the green beans are in the oven, melt the butter in a pot over medium heat.
9. Add in the mushrooms, and saute for 2 minutes.
10. Mix in the garlic, and saute another 30 seconds.
11. Pour in the heavy whipping cream, and simmer until beginning to thicken,
12. Stir in the parmesan and salt and pepper to taste. Remove from the heat, and set aside.
13. Remove the green bean bundles, and top with the sauce.
14. Garnish with pork rind crumbs before serving.
