Low-Carb Breakfast Muffins With Sausage
Everyone needs an easy breakfast that they can grab from the freezer and just heat up in the microwave or oven. That’s why I created this recipe!
These breakfast muffins are super-convenient. They are also one of the most all-purpose muffins you’ll find. They taste perfect for breakfast, brunch, snacks, or as a side dish.
Even if your family or friends aren’t on the keto diet, they will love these sausage muffins. Not only are they portable and easy to share, but they have a full flavor that impresses everyone.
Keto Sausage Muffins
A combination of almond and coconut flour is the perfect thing for these delightful gluten-free sausage muffins. Add some xanthan gum too – it holds everything together so it isn’t very crumbly.
Instead of sour cream, you can use plain unsweetened Greek yogurt. It has a slightly different taste but it won’t alter the flavor in the muffins.
In order to give the muffins a little heat, I used shredded pepper jack cheese and mozzarella cheese. Cheese is the easiest thing to change in a recipe. If you want a sharper flavor, use sharp cheddar cheese. Try it with any of your favorite types of cheese.
Keto Breakfast Muffins
I made the flavors milder so that my kids would enjoy them. The spiciest things in these muffins are the sausage and the pepper jack cheese.
Thankfully, it’s super easy to add some spice and heat to them! First, use the spiciest type of sausage you can find. Then, sprinkle some red pepper flakes into the egg and sour cream mixture.
Finally, top with sliced jalapenos as a little garnish. If that still isn’t spicy enough for you, then dice up some poblano peppers and add them to the egg mixture and top the muffins with some hot sauce.
Sausage Breakfast Muffins
I just love how easy these are to make ahead! They will stay fresh in an airtight container in the refrigerator for up to a week. To preserve them for longer, store them in the freezer. Here’s how.
First, bake them and then let them cool off completely. Then, place them on a baking sheet in a single layer and put the baking sheet in the freezer. After all the muffins are completely frozen, place them in a freezer-safe food storage bag.
Seal it up tightly and store the bag in the freezer for up to 6 months.
Thaw them in the refrigerator overnight and then reheat them in the oven, microwave, or toaster oven.
Sausage Cheese Muffins
These little sausage cheese muffins are so portable and easy to grab and go! Eat a few of them with a bacon egg and cheese chaffle and you have a complete meal.
You can also just enjoy them with a little handful of fresh fruit and a hot cup of coffee.
When you serve them as a party appetizer or side dish, these low-carb red bell pepper jalapeno poppers are the perfect thing to serve with them. They have a lot of the same flavors in them.

INGREDIENTS:
Breakfast sausage
Almond flour
Coconut flour
Xanthan gum
Egg
Sour cream
Baking powder
Salt
Garlic salt
Shredded mozzarella cheese
Shredded pepper jack cheese
INSTRUCTIONS:
1. In a skillet cook and crumble sausage.
2. In a mixing bowl, combine almond flour, coconut flour, and xanthan gum.
3. Stir in sour cream and 1 egg.
4. Add baking powder, salt, and garlic salt. Mix well.
5. Add cooked sausage and shredded cheese.
6. Spray muffin tins with nonstick spray. Fill approximately 8-9 tins with the batter.
6. Cook at 350 degrees F. for approximately 15-20 minutes.
7. Remove and garnish with fresh parsley, if desired.

- 1 tpsp Xanthan Gum

- 1/4 tsp Salt

- 1/2 cup Pepper Jack Cheese shredded
