Chicken thighs are my favorite cut of chicken to cook for my family. They always come out so juicy – not at all dry, like chicken breast. Plus, chicken things are often on sale and cost so much less than chicken breasts.
This recipe has an incredible sauce and tastes even better the second (or third) day. Make a double batch of these chicken thighs and save them for your meal prep.
The sweet and tangy chicken thighs taste incredible on top of salad, or added to keto-friendly pasta. It’s the perfect chicken to reuse in other recipes.
Balsamic Tomato and Herb Chicken
The combination of honey, balsamic vinegar, and chicken broth is pure culinary perfection! You can use this sauce to make pork chops too.
I used pre-made Italian seasoning, but you could sprinkle the chicken with parsley, oregano, and basil instead. Even though you could replace the minced garlic with garlic powder, I suggest using fresh garlic.
It will have a stronger aroma that outlasts the cooking process.
Chicken Balsamic Tomatoes
There are just 3 grams net carbs in each serving, even with the cherry tomatoes. It doesn’t matter whether you use grape or cherry tomatoes; they are very similar. It’s important to use bite-size tomatoes instead of trying to chop up larger tomatoes.
The combination of tomatoes and balsamic vinegar is a classic Italian mixture. It reminds me of Caprese salad. In fact, you could sprinkle some mozzarella cheese on top of the chicken thighs for a bit of creaminess.
Herb Roasted Chicken Thighs
Fresh herbs have the boldest and sweetest flavors for the roasted chicken thighs. Fresh rosemary and thyme remind me of the farmer’s market. If you don’t have fresh herbs, dried versions can also work.
If you want the chicken to crisp up on the outside, cook them in a cast iron skillet and then place them under the broiler for a few minutes.
What To Eat With Chicken Thighs
This is a really simple – but extremely flavorful – recipe for chicken thighs. Serve it with other Italian-flavored side dishes. Start out with a copycat Olive Garden salad. Then, add some keto breadsticks to the table, along with some sauteed zucchini.

Boneless skinless chicken thighs
Cherry tomatoes
Olive oil
Sugar free honey
Chicken broth
Balsamic vinegar
Italian seasoning
Minced garlic
Sprigs fresh rosemary
Sprigs fresh thyme
Salt and pepper
Instructions:
Heat the oil in a large skillet over medium high heat.
Season the chicken with salt and pepper to taste, and add to the heated skillet. Saute evenly on both sides until cooked through.
In a bowl, whisk together the sugar free honey, chicken broth, balsamic vinegar, Italian seasoning and minced garlic.
Reduce the heat to medium, and add in the tomatoes, sauce and fresh herbs.
Simmer until the tomatoes become soft, and easily pop when pressed lightly with the tines of a fork.
Serve over palminini noodles if desired.
