Sometimes you’ll find crispy chow mein noodles, other times they might be softer.
Chicken chow mein is a zesty Chinese dinner recipe. It has a distinctly sweet and sour sauce with a little bite from the ginger paste.
Low-Carb Chow Mein
To keep this recipe low-carb, you can use your favorite keto-friendly noodles. I noticed that zucchini noodles don’t fry up as well as Palmini noodles.
I used Palmini noodles because they are low-carb, tasty, and react really well to being fried with the snow peas and bell pepper in the skillet.
Chicken Chow Mein
This is a fantastic recipe to make for your weekly meal prep. It reheats wonderfully, especially as the sauce soaks even deeper into the noodles overnight.
Store leftovers in an airtight container and keep it in the refrigerator for up to three days. It’s best to reheat it in a skillet or air fryer. The microwave will work too, but it will make the noodles and veggies softer.

Snow peas
Red bell pepper
Napa cabbage
Boneless skinless chicken breasts
Palmini noodles
Soy sauce
Sugar free honey
Rice vinegar
Ginger paste
Water
Salt and pepper
Instructions:
In a bowl, stir together the soy sauce, sugar free honey, rice vinegar, ginger paste and water. Set aside.
Add the sesame oil to a skillet over medium high heat.
Saute the chicken in the skillet until cooked through. Season with salt and pepper to taste.
Mix the snow peas, palmini noodles and bell pepper into the skillet, and saute until beginning to soften.
Stir in the napa cabbage, and pour in the sauce.
Saute until well combined, and until some of the liquid has absorbed.

- 1/2 cup Snow Peas
- 1 Red Bell Pepper Sliced
- 2 cups Napa Cabbage chopped
- 1 pound Boneless Skinless Chicken Breast cut into small pieces
- 1 can Palmini Noodles drained and rinsed
- 2 tsp Sesame Oil
- 1/4 cup Soy Sauce
- 1 tbsp Sugar-Free Honey
- 2 tbsp Rice Vinegar
- 1 tsp Ginger Paste
- 2 tbsp Water
Instructions

In a bowl, stir together the soy sauce, sugar free honey, rice vinegar, ginger paste and water. Set aside.
