This is a cook once eat twice meal! You can use this juicy garlic butter roast chicken in lots of other meals too!
How To Roast Chicken
Roasting an entire chicken is a lot easier than it sounds. You can do it in your slow cooker, air fryer, and oven. I prefer using the oven because I think it comes out perfectly, every single time.
Before you roast the chicken in the oven, pat the entire chicken down with paper towels. You want the butter and spices to really soak into the meat, and any moisture that you leave on the chicken will dilute the flavors.
There are two main steps to roasting a chicken. First, roast it until the skin is cripsy and it reaches an internal temperature of 165F. Next, cover it with aluminum foil and roast it in the oven for another 15 minutes.
This allows all the flavors from the lemon and herbs to soak into the chicken.

Keto Chicken Recipe
Storing leftover roasted chicken is extremely easy. Remove as much meat as you can and put it in an airtight food storage container or resealable food storage bag. Keep it in the refrigerator for up to three days.
Don’t throw away the carcass! Boil it with some vegetables and your favorite combination of poultry seasoning and make homemade chicken stock.
Easy Chicken Dinner Idea
This roasted chicken turns out so juicy and tasty that you won’t need any gravy or sugary sauces on it. It takes about 2 hours to make, but then you can use it again in other recipes, saving you time on busy days.
Roast a whole chicken, carve it, and save as much meat as possible. Use it over again in other recipes throughout the week. Shred the chicken and use it in keto cream of chicken soup. Or make a cold keto lemon basil chicken salad for lunch.

I used a 4 pound whole chicken. Typically the ones readily available in
grocery stores measure between 4-6 pounds. Be sure to cook your chicken for 20 minutes per pound.
Poultry should be cooked to 165 degrees F. If you don’t have a meat thermometer, look for the flesh to have no pink color left and for the juices to run clear when pierced or sliced with a knife. Cut into the breast to look for these signs of doneness for best results.
If you like, you can baste your chicken every 20 minutes.
You can omit the lemons if preferred. While they add a scrumptious, bright flavor to this roast chicken, you’ll still end up with super flavorful, moist, and juicy chicken.
