What you’ll need to make this bacon cauliflower chowder
- 6 slices bacon, cut into pieces
- 1 onion, diced
- 3 to 4 carrots, sliced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1 head cauliflower, stem removed and coarsely chopped
- 4 cups vegetable or chicken broth
- 1 cup milk
- About 1 teaspoon xanthan gum
- Sea salt
- Black pepper
How To Make low carb Cauliflower Chowder
To make this low carb cauliflower chowder take a medium stockpot, and cook bacon over medium heat until crisp. Remove bacon and drain on paper toweling.
Now add the onion, carrots, and celery to the pot. Cook for 3 to 5 minutes or until softened, scraping any browned pieces from the bottom of the pot with a wooden spoon. Stir in the garlic and add salt and pepper to your preference.
Add the cauliflower, broth, and milk to the pot. Heat until boiling and cook for approximately 15 minutes or until cauliflower is tender.
Next, add xanthan gum to the soup a little at a time until you reach the desired consistency. Keep in mind that the soup will continue to thicken slightly as it cools.
Serve topped with cooked bacon and/or cheese.
Optional toppings:
Swap out the bacon for mushrooms.
For a spicy kick top with jalapeños.
Add some extra crunch by topping with hazelnuts.

Make your chowder (minus the toppings) and put in an airtight container and store for up to 4 days. When ready to eat reheat on stovetop and add Toppings when ready to serve.
