Keto Cobb Salad
This easy cobb salad recipe is the perfect thing to eat for lunch because it will give you natural energy and won’t leave you feeling sluggish or tired. It is a fantastic source of protein – from the lean chicken, hard-boiled eggs, and crumbled goat cheese.
Plus, the avocado adds a creamy texture and some healthy fats that will keep you feeling full between meals.
Is Cobb Salad Keto
The only things about cobb salads you might buy at a restaurant or grocery store are the salad dressing and the croutons. Lettuce, cheese, bacon, and eggs are all keto-friendly ingredients.
This keto cobb salad recipe is fantastically low in carbs. There are just 5 grams net carbs in each serving – and that includes the fruit! You can lower the total carbs even more if you leave out the fruit.
I like to keep all the ingredients for this keto cobb salad in the refrigerator so that I can mix it together for lunch. It takes just a few minutes to put it together and the result is a filling and delicious lunch.
Keto Cobb Salad Dressing
The keto cobb salad dressing is one of my favorite things about this recipe. The dijon mustard adds a creaminess and tanginess to the balsamic vinegar and olive oil.
If you want to, you can add your favorite type of keto-friendly sweetener. It’s optional – I didn’t add any and I think it tastes delicious without it.
Instead of olive oil, try to use avocado oil. Not only will it taste delicious with the chopped avocados in the salad, but it will add essential fatty acids to the dressing too.
I like to make extra salad dressing and store it in a recycled salad dressing bottle. That way I can give it a nice shake to mix it before I use it. This homemade vinaigrette will stay fresh in the refrigerator for up to 3 months.
Low-Carb Berries
Did you know that you can eat fruit on the keto diet? You just have to make smart choices with the types of fruit you eat. Raspberries and Blackberries are some of the berries with the least amount of carbs.
There are just 6.7 grams net carbs in a cup of raspberries, and 4.31 grams net carbs in blackberries. I like to use these two types of berries as a snack with a low-carb trail mix or to squelch my sugar cravings when they hit.
Strawberries are another type of berry that is low in carbs and fit in with a keto lifestyle.
Easy Cobb Salad
There are a lot of different ways you can customize this salad too! In fact, the more you customize it, the better you will like it. Browse the specialty cheese section at the grocery store and add something different to the salad.
I’ve seen some amazing types of cheese – a balsamic vinegar cheese, which tastes amazing with this vinaigrette. You can also shred a rotisserie chicken to save yourself time, or use canned chicken.
This is also a wonderful way to use leftover chicken that you made for other meals.
