This salad is a hearty and filling lunch or a delicious side dish for holiday parties. Plus, it is budget-friendly too! I used canned chicken, which is super-affordable. You could use shredded rotisserie chicken to save yourself time.
Sometimes I’ll cook a bunch of chicken breasts in the slow cooker and use them in recipes like this one throughout the week. I’ve used leftover chicken on dill chicken salad pickle boats and low-carb pesto chicken salad. Keep extra chicken in your fridge, you are sure to find new ways to eat it.
Creamy Salad Dressing On Keto
The dressing is what really sets this salad apart from others. I combined both mayo and plain Greek yogurt. Together it has a zesty almost tart taste! Then, I added some garlic salt, and lemon juice.
Trust me, use fresh lemon. It has a lot more flavor and will make your salad taste like it was kissed by the sun.
If you use garlic salt, you don’t have to add much extra salt. If you use garlic powder, you might want to add a dash of salt. Taste it and make it how you like it.
Creamy Broccoli Salad
This recipe is super easy to make and store ahead for the rest of the week. Keep it in an airtight container. It will stay fresh for up to a week. After a week, the texture will start to change and it won’t be nearly as tasty.
Keto Broccoli Salad With Chicken
I used broccoli and chicken, but there are lots of ways that you can change this recipe and make it different each time. Instead of broccoli, add some cauliflower florets, bits of raw cucumber, or carrots. Carrots have more carbs in them than broccoli does, so use fewer carrots if you are counting your carbs.
You can also change the type of meat that you used. Instead of chicken, make this with leftover turkey from the holidays. In fact, the broccoli and creamy dressing completely change the taste of the turkey so it doesn’t even taste like leftovers.
Don’t forget to add the bacon on top! If you have leftover ham from the holidays, dice it up really small and add that to the salad. Oh, but only if it wasn’t covered in a sugary glaze. If it was a salted ham or unglazed, it’s a keto-friendly type of meat that you can add to the salad.

This side dish is perfect to share at your family holiday dinners. Even people who aren’t on the keto diet or don’t normally like sugar-free or low-carb recipes. In fact, this doesn’t have any sugar substitutes in it, so it won’t have any funky aftertaste.

Greek Yogurt
Garlic Salt
Lemon
Instructions:
In a large bowl, combine chopped broccoli, red onion and canned chicken.
In a separate bowl, whisk together mayo, greek yogurt & garlic salt.
Pour the dressing over the chopped ingredients and mix well.
Stir in lemon juice and 5 crumbed strips of bacon.
Add salt and pepper to taste.
When you are ready to serve, garnish with remaining bacon crumbles.
