Keto Blueberry Breakfast Bread
How do you fight cravings for sweets when you are on the keto diet? For me, it hits the hardest as I pass the bakery section of my grocery store. I just go home and make a really easy low-carb dessert and indulge my sweet tooth! That’s the best way. You just make smarter choices instead of denying yourself until one day you overdo it.
This is called a breakfast bread because it tastes perfect with a hot cup of coffee or tea. It’s packed with protein and the ideal way to start your day.
It’s also a smart low-carb snack idea. Just cut a slice and enjoy every bite. Savor the sweet blueberries with the crumbly bread. It will fill you up and keep you full until your next meal.
Easy Keto Bread Recipe With Almond Flour
This is such an easy bread to make. The longest part of the bread is the cooking time – it takes about 45 minutes in the oven. Other than that, if you can mix things together, you can make this bread.
Here’s what I used in my keto blueberry bread recipe , along with any substations or replacements:
- Eggs
- Almond Flour – Use almond flour, not almond meal. The almond meal includes the skins from the almonds so it will make your bread taste grainy.
- Sweetener – I used Swerve granular. You can use any keto-friendly sweetener you like, just make sure it is granular, not confectioners.
- Coconut Flour – Do not substitute this with almond flour. You need this coconut flour to give the bread the bulk and soak up the wet ingredients.
- Vanilla Extract
- Heavy Whipping Cream
- Butter
- Blueberries – you can use frozen blueberries, just let them thaw first.
- Baking Powder
Best Keto Blueberry Bread
The moment you slice into it, you’ll understand why this is the best blueberry bread you have ever made! Even though it is gluten-free, it still holds together really well. Plus, the vanilla, granular sweetener, and blueberries all take this to a level of sweet that you don’t expect from something that is so low-carb.
How To Freeze It
One of the best ways to enjoy this bread when you don’t have time to bake it is to freeze it. This bread freezes really well! Bake it completely and then let it cool.
When it’s completely cool, wrap it tightly in foil and place it in a plastic freezer bag. Label the bag with the recipe and the date. This bread will last about 6 months in your freezer.
Then, all you have to do when you are ready to enjoy it again is let it thaw overnight in your refrigerator! You can speed up this process by unwrapping it and letting it bake in your oven for about 15 minutes at 300 degrees F.
Keto Breakfast Ideas
