Keto-Friendly Egg Salad
This is basically a loaded creamy cucumber salad. Mixed in with the chopped up cucumbers are some hard-boiled eggs, crunchy celery pieces, crispy bacon bits, and even some fresh green onions. It’s all mixed together with the spicy mayo and mustard dressing. In fact, this dressing is so incredibly delicious that you should save it. You can use it again on other salad ideas!

A really easy mayo replacement that is still keto-friendly is unsweetened plain Greek yogurt. You could also use cottage cheese or hummus.

Best Cucumber Salad
One thing I love about this salad is that it is a fresh egg salad that can be eaten on its own or served as a holiday side dish. It’s so beautiful and delicious that everyone at your dinner table will love it!
This salad is completely different from other creamy egg salads. Since I used both hot sauce and hot mustard in it, the dressing really has a bite to it! Plus, the cucumbers and celery both add a delightful crunch to an otherwise creamy salad.
How To Make Low Carb Egg Salad With Bacon

If you don’t like things that are too spicy, you can leave the hot sauce out. This also tastes just as delicious without the parsley. Adding the parsley is a beautiful way to present it if you are serving it at a holiday meal.
Here are some ideas for other things you can add as toppings:
- Diced jalapenos
- Shredded Cheese
- Diced tomatoes
How Do You Hard Boil Eggs For Salad?
The best way to hard boil eggs is right on the stove. You basically put the eggs in the pot, bring the water to a boil, and then turn off the burner, cover with a lid, and set the timer for 12 minutes.
It really is that easy!
You can also hard boil eggs in the Instant Pot or in the Ninja Foodi if that’s easier for you. These method still takes about 15 minutes, but you don’t have to worry about when to cover the eggs or how long to let the water boil.
How To Store Cucumber Egg Salad
The best way to store this salad is in an airtight container in the refrigerator. It will last about 4 days in the refrigerator.
Do not freeze this salad. Veggies in a creamy dressing don’t freeze and then thaw well.
What To Serve With It
This salad goes great with my turkey breast recipe. If you want to eat it like a sandwich, serve it on white bread chaffle.
