Move over cold chicken salad, you have competition! This cheesy, creamy, bubbly chicken salad is served hot from the oven. It will warm you up on blustery windy days. It’s also wonderful to keep warm in a slow cooker and serve at huge family dinners.
Since it is a baked chicken salad, it tastes delicious with other baked or fried side dishes. You can enjoy it for lunch or dinner. Basically, it’s a wonderfully delicious meal that you’ll want to make every week.
Baked Chicken Salad That’s Low Carb
For this recipe, I used boneless, skinless chicken breasts that I cut up into cubes and cooked. Save money and time by using canned cooked chicken or shredded rotisserie chicken.
The best type of onion to use in this casserole is white onion because it has a mild flavor that blends in with the chicken and cream sauce. Yellow onions can work too. If you use red onions, use 1/4 of the onion instead of half since it has such a bold flavor.
Low Carb Hot Chicken Salad
This hot chicken salad is pretty mild, so it’s really popular with kids! If you prefer dishes with a little heat, I suggest adding some red pepper flakes. You could also chop up your favorite peppers (like jalapeno or serrano) and mix them in too.
Don’t forget the garnish! Add some fresh parsley and chopped green onions for some color and an extra fresh taste too.
Sides For Baked Chicken
Since this is a mild baked chicken recipe, almost any side dish you make will taste delicious! Add some low-carb everything bagel breadsticks. They are naturally sweetened with pumpkin!
Or really indulge in dairy and make some cheesy garlic spinach parmesan zucchini boats on the side. Of course, you can never go wrong with some crispy keto bang bang cauliflower either. Or just serve it with a mild garlic cauliflower rice side dish. It has lots of the same flavors as this chicken salad.
If you are crunched for time, just chop up some raw veggies and dip them in the creamy sauce. It takes no prep time and dinner is served.
Creamy Low Carb Chicken
One of my favorite things about this recipe is that it literally takes 30 minutes to bake! If you use pre-cooked chicken, there isn’t any prep time (except for waiting for the oven to heat up).
You can also make this recipe in the slow cooker. Add the raw, cubed chicken breasts to the slow cooker with the rest of the ingredients. Let it cook on low for 6-8 hours and dinner is ready!
Even though you could store it and use it for your meal prep later in the week, the cheese will harden and it won’t have the same fresh taste as it does when it is right out of the oven. I suggest enjoying it fresh.
If you want to store leftovers, keep them in an airtight container and for no longer than 3 days.

INSTRUCTIONS:
1. Preheat the oven to 350 degrees F.

3. In a large bowl, combine chicken, onion, and celery.
4. Add mayo mixture, salt, and pepper to the bowl. Stir well.
5. Add 1 cup of shredded cheddar cheese.
6. Pour the mixture into a baking dish. Top with the remaining 1 cup of cheese.
7. Bake for 25 minutes. Remove carefully and top with chopped green onions.
