This recipe is a tasty way to use up ground beef. It has a thick and creamy texture with a mild flavor – so it is perfect for picky eaters or families with kids. You can also confidently take it to a cookout or pot luck and know that everyone is going to eat it up!

Keto Cheesy Beef Casserole
This hearty casserole will fill everyone up! All the dairy and cheese make it taste super-rich. It doesn’t take much of this casserole to fill you up.
Not only is it hearty, but it is budget-friendly too. The most expensive ingredient in it is ground beef. To save money on beef, I buy it in bulk and then separate it into one-pound sections and freeze it.
This casserole uses about 1 1/2 pounds of ground beef, but you can probably get away with just using one pound.
Ground Beef Spinach Casserole
Spinach is the perfect vegetable to use in cheesy casseroles because it wilts and has a very mild taste. Try to add a little bit of kale to it too.
The kale will give it a bolder taste and make it even healthier. Don’t worry if you don’t like kale, spinach is plenty healthy by itself. It is really high in iron, vitamin A, and vitamin C.
Ground Beef Spinach Bake Low Carb
Make a huge batch of it and save some back for your meal prep the rest of the week. I love how it tastes when you heat it back up! Store leftovers in airtight food storage containers and then keep it in the refrigerator. It will stay fresh for up to 5 days.
After five days, the taste and texture will start to deteriorate.
There are lots of ways that you can customize this casserole and make it taste different each time. Use a different type of cheese – pepper jack is slightly spicy. If you want to make it have a southwest flair, add some salsa on top before you eat it.
The options are endless!
Spinach Mushroom Casserole
You can also turn this into a meatless meal. Just double the number of mushrooms and spinach and add more vegetables. Zucchini and squash will taste perfect mixed in!
Or, use a different type of meat. Ground turkey and chicken have a lot less flavor, so if you use them, I suggest adding more garlic and salt. For more flavor, use some ground sausage.
The only spices I used in this casserole is basil and garlic. If you want it to have more flavor, I suggest adding some parsley, oregano, and marjoram. Some red pepper flakes will add an undertone of heat.
What To Serve With Beef Casserole
Since this casserole has lots of Italian flair to it, I suggest making some low-carb bread to go with it. My kids love my keto garlic knots. Or, make some crispy low-carb garlic toast. Roast or steam some veggies or add a chopped salad and you have a really quick and easy feast ready for your entire family!

Ingredients:
Ground beef
Medium onion
Sliced mushrooms
Dried basil
Minced garlic
Spinach
Heavy whipping cream
Grated parmesan cheese
Shredded Mozzarella cheese
Salt and pepper to taste
Instructions:
1. Preheat the oven to 350 degrees.
2. Add the ground beef and onion to a skillet over medium high heat. Saute until the meat is completely browned and the onions are softened. Drain any excess fat.
3. Mix in the mushrooms and saute until beginning to soften.
4. Reduce the heat to medium and stir in the basil and minced garlic. Saute for 30 seconds.
5. Place the spinach in the skillet and saute until wilted.
6. Stir in the heavy whipping cream, parmesan cheese and mozzarella cheese until well combined and thickened.
7. Season with salt and pepper to taste.
8. Place the mixture into a well greased 9×9 baking dish.
9. Bake for 20 minutes. Let sit for 10 minutes before serving.

- 1 1/2 cup Mozzarella Cheese shredded
Instructions
