Keto French Onion Chicken
Before I went on the keto diet, one of my favorite types of soup was French onion soup. I just love that savory broth, the melted cheese, and the croutons or bread served on top! Instead of being tempted by it again, I decided to try and take my favorite parts of that soup and turn it into a delicious casserole for dinner.
My casserole is based on that savory and onion-packed classic usually served in restaurants and cafes. If you don’t like slicing onions, then I suggest using a mandolin slicer or a food processor. Either of those options cuts the prep time down significantly!
Chicken breast is the best type of chicken to use in this casserole. It shreds really easily. You can either cook your own chicken breast or use some rotisserie chicken from the grocery store.
French Onion Chicken Casserole
This simple French onion chicken casserole will feed your entire family. This is the main course, so if you are serving this for dinner, I suggest adding some type of vegetable as the side.
This keto jalapeno popper green bean casserole is low in carbs and big on flavor! Or add my keto garlic knots on the side, they taste just like dinner rolls. This recipe also tastes delicious with some keto cheddar drop biscuits! They are super-easy to make and my kids love them.
Use either white or yellow onions in this casserole. The red onions have a very overpowering taste. Milder yellow or white onions will make this casserole more palatable.
Best Cheese For French Onion
You want to choose a type of cheese that will melt beautifully and even brown a little bit. I used Gruyere cheese. Shred it up nice and small and it will melt all over the casserole perfectly.
If you don’t have Gruyere cheese, you can use mozzarella cheese in its place.
Low-Carb Cheesy Chicken Casserole
This cheesy chicken casserole is perfect for meal prep! I love to make a big batch for the family and then save some for myself for later on during the week.
Store leftover casserole in an airtight food storage container and keep it in the refrigerator for about 3 days. After this time, the taste and texture will start to deteriorate.
What is Herbes de Provence
Another spice mix I used in this recipe is one that sounds very French – herbes de provence. This is a mixture of dried herbs from the Provence region in southeastern France. It is usually a mixture of marjoram, rosemary, thyme, and oregano. Some mixtures add lavender to it.
This spice mix sounds fancy but it is actually pretty easy to find. It’s sold with the other spices at the supermarket.
