Keto Flatbread
I just love a good flatbread, don’t you? The crispy bread is layered with incredible ingredients. There are so many ways to make a flatbread. Cranberry and brie go perfectly together and encapsulate all the flavors of the holiday season.
This keto flatbread is made with a classic “fathead dough” recipe. Fathead dough is a way of making keto-friendly bread with mozzarella cheese, cream cheese, and almond flour. I’ve used it before to make low-carb pumpkin pretzel bites. It’s a really versatile recipe.
I altered the recipe by adding ground flaxseed to the bread batter. This soaked up some of the extra moisture and helped the flatbread have an authentic taste and texture.
Baked Bried Cranberry
Baked brie and cranberry taste iconic together! I love how the sweet and zesty cranberries bring out the deep flavor in the soft brie cheese.
To help the brie spread better (and to round out the flavors) I added a little bit of mascarpone cheese. If you can’t find mascarpone cheese, you can use either cream cheese or ricotta cheese as a substitute.
I also garnished the keto flatbread with some chopped walnuts. They are high-fat and low-carb nuts that add crunch and deeper flavors to your bread. The walnuts are optional, but I think they really enhance the flavors in this incredible bread.
Keto Cranberry Bread
When you use fresh cranberries, you will be able to taste a huge difference. The sweetness and tanginess are so much more pronounced in fresh fruit. Plus, fresh cranberries have a lot more fiber in them, which decreases the number of net carbs in each slice of bread.
Every meal, party, or snack is the perfect excuse to serve this keto flatbread. Enjoy it for lunch with your favorite low-carb cranberry arugula salad. Or serve it with your favorite keto skillet cranberry chicken dinner.
Keto Brie Appetizer
Cut it up into small pieces and serve it at your next party. If you are expecting quite a few guests, you might want to make a double batch of this bread. If you follow the amounts in the recipe card, you will make enough to feed 6 people.
This is such a tasty flatbread that each person will probably eat two servings.
One more quick note about one of the ingredients. Please use almond flour, not almond meal. Almond meal has bits of almond skins mixed into it, which will give the flatbread a grainy texture. It might not be very noticeable, but it can also distract from the other incredible flavors.
Cranberry Low-Carb Recipe
If you have leftovers of this bread, I suggest storing them in an airtight food storage container in the refrigerator. It will only stay fresh for about 3 days. After 3 days, the cheese and cranberries will begin to change the texture and it won’t be as appealing.
There is a lot of mixing involved in this recipe. If you don’t already have an electric mixer, let this be your sign that you should get one. It will save you so much time and energy.
Cranberry Brie Keto Flatbread Recipe

Ingredients:
Shredded mozzarella cheese
Cream cheese
Almond flour
Flaxseed ground
Salt
Rosemary
Baking powder
Mascarpone cheese
Brie cheese
Fresh cranberries
Chopped walnuts
Instructions:
1. Preheat the oven to 350 degrees, and line a baking sheet with parchment paper.
2. Place the cream cheese and mozzarella cheese into a microwave safe bowl.
3. Heat for 30 seconds at a time until well melted and combined.
4. Place the cheese dough into a mixing bowl with the ground flaxseed, baking powder, almond flour, pinch of salt and 1 Tbsp of the rosemary. Blend until a dough has formed.
5. Press the dough into a thin rectangular shape on the baking sheet.
6. Bake for 5 minutes.
7. Remove, and spread the mascarpone cheese on the flatbread.
8. Dot with the pieces of brie.
9. Add the cranberries, walnuts and remaining rosemary on top.
10. Bake for 15-20 minutes longer.
11. Let cool, and slice to serve.
